Class 1 · P1.1

How pairing actually works

Two things in your mouth at once, and each one changes the other. There are only three ways that change can help, and knowing which one you are reaching for is most of the skill.

By the end of this class you will be able to

  1. Say what is actually happening when a beer and a plate of food improve each other
  2. Name the three mechanisms, and recognise which one a dish is asking for
  3. Set honest expectations: most pairings are fine, a few are excellent, a few are bad
Before you start

If you read one screen of this module, read the second one. Matching intensity before anything else fixes more bad pairings than every clever flavour idea put together.
