Whatever glass the style being copied would use. A stout in a pint glass, a pilsner in something tall.

Any beer of any style that ends up under 0.5% alcohol by volume, reached by three completely different production routes. · The United States figure comes from Prohibition. The Volstead Act of 1919 defined intoxicating liquor as 0.5% alcohol and above, so brewers made a beer at 0.5% and called it near beer. The modern wave starts with Athletic Brewing in Connecticut in 2017 and has grown by double digits every year since.
Field marks
It looks exactly like the beer it is imitating, because it usually is that beer with a step added or removed. Colour, head and clarity give you nothing at all. The label is the only visual clue, and by law it has to carry one.
In the mouth
Right up until you swallow, this can be convincing. Then nothing happens. There is no warmth, no spread through the chest, and no lingering. The body is often a shade thinner than the flavour promises, and many examples are a little sweeter than their full strength originals.
Confused with
Low alcohol beer, which is legally a different thing and can go up to 2.5%. Hop water, which contains no malt and is not beer. Full strength light lager, which is still 4% or so. Kombucha, which is fermented and often sits right at the same threshold.

Say this part plainly, because for some readers it is the only line on the page that matters. In the United States, the words non-alcoholic on a beer label mean the drink contains less than 0.5% alcohol by volume. They do not mean zero.
The rule is federal and specific. A malt beverage may only be called non-alcoholic if the statement that it contains less than 0.5 percent alcohol by volume appears right next to the words, clearly printed. The phrase alcohol free is held to a stricter standard and may only be used on a malt beverage containing no alcohol at all.
If you are avoiding alcohol entirely
That 0.5% is small. A 12 ounce can at 0.4% contains about the same alcohol as a third of an ounce of ordinary beer, and comparable traces occur in ripe fruit, bread and kombucha. If you are avoiding alcohol for a medical reason, during pregnancy, or as part of recovery, the quantity is only half the question. The taste, the smell and the ritual are the other half, and clinicians and recovery programmes genuinely disagree about whether those cues help or hurt. That is a conversation for your doctor or your sponsor rather than for a beer course, and this page will not pretend otherwise.
The tell that settles it
Swallow, then wait. In an ordinary beer something continues to happen: a faint warmth, a spreading, a slow fade. In a non-alcoholic beer the experience simply stops when the liquid does.
That absence is the most reliable sign, and it works even when the flavour is convincing. Ethanol carries aroma, adds a sense of weight, and produces the warmth people call the finish. Take it out and the beer ends abruptly.
The second sign is in the middle of your mouth. The beer often feels a little thinner than the flavour led you to expect, and sometimes a little sweeter, because sugar the yeast never turned into alcohol is still sitting there.
Where the category came from, and where it is now
The 0.5% figure is a Prohibition inheritance. The Volstead Act of 1919 defined an intoxicating liquor as anything at 0.5% alcohol or above, so American brewers made a beer that came in just underneath and sold it as near beer. The threshold has outlived the law that produced it by more than ninety years.
The category then spent decades being dull. Through the 1980s and 1990s it was a short list of unloved brands that existed for designated drivers. Very little effort went into it and it tasted like it.
The change is recent and large. Athletic Brewing opened in Connecticut in 2017 making nothing but non-alcoholic beer. By 2025 it was the sixth largest craft brewing company in the United States by volume, up from eighth the year before. It is the first brewery of real size ever built on this category alone.
The numbers behind that are worth knowing. American retail sales of non-alcoholic beer tracked by Circana reached about 583 million dollars in the 52 weeks to 28 December 2025, up 22.1% on the year before, with cases up 23.9%. Separate figures from NIQ put non-alcoholic beer at 2.5% of American beer by volume in 2025, more than double its 1.1% share in 2021.
Sources disagree
What counts as a non-alcoholic beer, and whether any official body has a style for it.
US Alcohol and Tobacco Tax and Trade Bureau. Non-alcoholic may be used only alongside the statement that the drink contains less than 0.5 percent alcohol by volume. Alcohol free may be used only on a malt beverage containing no alcohol. Low alcohol and reduced alcohol may be used only under 2.5% alcohol by volume.
Brewers Association 2026. Three competition categories, all under 0.4% alcohol by weight, which is under 0.5% by volume: Classic Non-Alcohol Ale or Lager, Hoppy Non-Alcohol Beer at 30 to 85 IBU, and Specialty Non-Alcohol Beer.
BJCP 2021. Nothing. There is no non-alcoholic entry anywhere in the guidelines, and no category that a brewer could enter one into.
The legal definition is the one that governs what you can buy, and it is a ceiling rather than a recipe. The Brewers Association added competition categories because breweries needed somewhere to enter these beers, and its three groups are organised by hop level rather than by anything traditional. The BJCP has not caught up, which tells you how fast this category moved. Read the label for the number and read the style name for everything else.

About 2.5%, according to NIQ, so more than double the 1.1% it held in 2021. Most people guess much higher, because non-alcoholic beer is suddenly visible everywhere and visibility feels like size. Growth and share are different things: this is a small slice of the market growing very fast, which is exactly why it is discussed so much.
The 0.5% threshold in American law is inherited from which period, when a beer just below that line was sold as near beer?

The threshold, the sales figure and the growth rate are all right. Athletic is the tempting fourth, and it is remarkable rather than largest. It was sixth among craft brewing companies by volume in 2025, up from eighth in 2024, and it sits further down the list once the very large national brewers are included. First in its own category is not first overall.
11.1.1.2 Three ways to keep the alcohol out
Never make it, take it out afterwards, or use a yeast that cannot make it. Each route leaves a different fingerprint.
Two words first. Wort is the sweet liquid a brewer gets after soaking crushed grain in hot water, before the yeast goes in. Attenuation is how far the yeast gets through the sugar in that liquid before it stops. Every method below is a way of controlling attenuation or of undoing its result.
Alcohol is what yeast makes out of sugar. There are only three places to intervene: stop the yeast early, remove what it made, or use a yeast that cannot make much in the first place.

Stop fermentation early by chilling the beer hard, filtering the yeast out, or heating it. A version called cold contact fermentation runs the yeast at close to freezing for a day or so, so it takes up aroma from the wort and produces almost no alcohol.
Sugar the yeast never reached stays in the beer, so it can taste sweet and worty, meaning like the raw sweet liquid before it was fermented.

Take the alcohol out afterwards
Brew ordinary beer, then remove the ethanol. Vacuum distillation lowers the pressure so alcohol boils off at a gentle temperature instead of a damaging one. Reverse osmosis pushes the beer through a fine membrane under pressure and separates the alcohol and water from everything else.
Aroma leaves with the alcohol, because the compounds you want are volatile too. Brewers put hops or aroma back afterwards to compensate.
Maltose is the main sugar in wort. Some yeasts cannot eat it at all, so they consume the few simple sugars, stop, and leave the rest alone. Species used include Saccharomycodes ludwigii, Pichia kluyveri and Torulaspora delbrueckii, and several of them throw generous fruity aromas while they work.
Less alcohol means less body, and the beer can still read as sweet. The upside is real aroma made by real fermentation.
The newest route, spreading fast
Three routes to one legal number. Guinness and Heineken publish theirs. Most breweries do not.
What two of the big brands actually say
Guinness says it brews Guinness exactly as it always has, with the same water, barley, hops and yeast. The alcohol is then gently removed by cold filtration, which avoids putting the beer under heat stress. Heineken says its 0.0 is double brewed with the same ingredients as the original. The alcohol is then removed by vacuum distillation, and natural flavourings are blended back in afterwards.
Athletic Brewing, which sells more non-alcoholic craft beer than anybody in the country, will only say that it uses a proprietary method built through hundreds of small batch trials. It does not publish which of the three routes that is, and there is nothing unusual about that. The can almost never tells you.
Why hops are the workaround for all three
Every route above ends with a beer that is short of aroma. Removing alcohol strips it, stopping fermentation early never generates it, and low alcohol yeast makes a narrower set of compounds than a normal one.
Hops solve this cheaply. Adding them cold and late, after fermentation, puts a large aroma into the beer without heating anything or adding any alcohol. That is why so many of the best non-alcoholic beers are IPAs and pale ales, and why the Brewers Association gave hoppy examples a category of their own.
The problem all three share
Sugar that was never fermented tastes of the sweet liquid it came from. Brewers call this worty, and it is the defining fault of the category. It comes from a family of compounds including 3-methylbutanal and methional, and it reads as canned sweetcorn, cooked vegetable, honey, or simply unfinished. Almost all of the improvement in non-alcoholic beer over the last ten years has been about getting rid of it.
Worked example: Reading a can backwards
You are handed a non-alcoholic IPA that smells strongly of grapefruit, tastes clean with no vegetal sweetness, feels a little light, and stops the moment you swallow.
A big fresh hop aroma with no alcohol behind it points at hops added cold, after fermentation.
No worty or vegetal sweetness points at either a dealcoholized beer or a well handled low alcohol yeast, rather than a crudely arrested fermentation.
A light body points at the missing ethanol, which contributes weight as well as warmth.
The abrupt ending is simply the absence of alcohol, and no process can fix it.
Three of the four clues are about what is missing. This is the category where absence carries most of the information.

Two of these never make the alcohol, two remove it afterwards, and one avoids the problem by changing the yeast. Vacuum distillation and reverse osmosis are the pair people mix up. One uses gentle heat under low pressure and the other uses pressure and a membrane with no heat at all, and both belong to the same route.
Why do brewers who remove the alcohol from finished beer usually add hops afterwards?
Answer: Aroma compounds are volatile too, so they leave along with the alcohol
The process cannot tell the difference between ethanol and the aromatic compounds you wanted to keep, so both go. Adding hops cold afterwards puts the smell back without adding any alcohol. Preservation is the tempting answer, since hops genuinely do have antimicrobial properties, and that is not the reason here. Removing alcohol does not create bitterness.

Cold, after fermentation. A cold hop addition adds aroma without heating anything and without adding any alcohol, which makes it the obvious tool when every other route to aroma has been closed off. Early in the boil is the tempting answer, and heat drives aroma off rather than fixing it there. That addition creates bitterness instead.

Three routes and two examples each. The membrane is the item most often misplaced, because filtering sounds like it belongs with stopping the yeast early. Reverse osmosis happens to a finished beer and separates the alcohol out of it, so it sits with vacuum distillation rather than with anything that touches the fermentation.
A yeast that cannot eat maltose will still ferment a normal wort into a normal strength beer, just more slowly.
Answer: False
False. Maltose is the main sugar in wort, so a yeast that cannot use it runs out of food almost immediately. It takes the few simple sugars, stops, and leaves the rest behind, which is precisely why brewers want it. Several of these species also produce generous fruity aromas while they work, which is a genuine bonus rather than a compromise.

Four neighbours, and the differences between them are legal and structural rather than a matter of taste.
The confusions here are unusual, because they are almost all about words. Nobody mistakes a stout for a pilsner. A great many people believe that non-alcoholic, alcohol free, low alcohol and light all mean roughly the same thing, and they do not.

Read the exact words. In the United States the phrase alcohol free may only be used on a malt beverage that contains no alcohol, so it is a stricter claim than non-alcoholic. Products marked 0.0% are aiming at this line.

Check the number. Federal rules allow low alcohol and reduced alcohol only under 2.5% by volume, which is five times the non-alcoholic ceiling. A 2% table beer is a real beer that will do something to you over an evening.
Look for malt. Hop water is carbonated water with hops in it and no grain at all, so it was never fermented and is not beer. It smells like an IPA and has no body, no calories to speak of and no malt sweetness.
Do not be misled by the word light. It refers to calories and body, not to alcohol, and these are full strength beers. This is the most consequential confusion on the page and it catches people who are driving.

What number is on the can. Not what word, what number. Light, session, easy and crisp are marketing words with no legal meaning. Non-alcoholic, alcohol free and low alcohol all have legal meanings and all of them are different. The percentage is the only thing on the label that cannot be spun.

Four legal tiers and two of the words look interchangeable. Light lager is the item people get wrong and it is the one that matters most, because the word light refers to calories and body rather than to alcohol. A light lager at 4.2% is a full strength beer, and somebody who is driving needs to know that.
A can smells strongly of grapefruit and pine, has no malt sweetness, essentially no calories and no body at all. What is it?
Answer: Hop water, which is carbonated water with hops and no grain
Hop water. It was never fermented and contains no malt, so there is nothing there to give it body or calories. A non-alcoholic IPA is the tempting answer since the aroma is nearly identical, and it is made from grain and does have some body and 60 to 90 calories. A low alcohol pale ale would have more of both.

Three of these are federally defined and two are not. Light is the pair people place wrongly, and it is also the most consequential, since a light lager is a full strength beer at around 4.2%. Session has no legal meaning whatsoever and gets attached to beers from 3% to 5% depending on who is selling it.
A beer labelled low alcohol is a reasonable substitute for a non-alcoholic beer if you are driving.

False, and the gap is bigger than it sounds. Low alcohol is allowed up to 2.5% by volume, which is five times the non-alcoholic ceiling. Two pints of a 2.5% beer carry roughly as much alcohol as one pint of an ordinary lager. If the reason you are choosing it matters, read the number rather than the adjective.
Which of these contain no malt at all?
Answer: Hop water · Kombucha
Hop water is carbonated water with hops in it, and kombucha is fermented tea. Both skip grain entirely, which is why neither is beer. The other two are made from barley in the ordinary way, and Guinness says explicitly that it brews Guinness as it always has and then removes the alcohol at the end.
11.1.2.2 Will you like it, and what to buy
This is the one category in the course where the reason to order is usually a situation rather than a taste.
Order one if any of these is true
You are driving, on call, or have an early start, and you still want the drink rather than a soft drink.
You are pacing yourself. Alternating an ordinary beer with a non-alcoholic one is the single most useful trick in this course.
You are not drinking at all, for any reason, and you want to be holding the same kind of glass as everyone else.
You want the taste of an IPA at lunchtime. Hop aroma survives this process better than anything else does.
You are counting calories. Most sit between 25 and 90 per 12 ounce serving against roughly 150 for an ordinary lager.
Leave it for now if any of these is true
You want the warmth. That is the one thing no process can give you back, and it is the whole point of a strong beer.
You want a full, weighty body. These beers are lighter than their originals and the best of them are still lighter.
You dislike sweetness. The weaker examples still carry sugar the yeast never reached.
You need certainty about zero alcohol. Look for the words alcohol free rather than non-alcoholic, and read the number.
If you want less alcohol rather than none, a table beer at 2% to 3% will give you far more body and flavour. If you want the hop aroma with no beer underneath it at all, hop water is cheaper and lighter.
What to buy this week
Athletic Brewing Run Wild IPA, under 0.5%, and Athletic Upside Dawn, a golden ale at 45 calories per 12 ounces. Sold nationally, in cans, everywhere from supermarkets to gas stations. Athletic was the sixth largest craft brewing company in the United States by volume in 2025, and its beers are the default reference point for the category.
Guinness 0.0, widely stocked and available on draught in a growing number of bars. Guinness brews it as it always has, then removes the alcohol by cold filtration, and states 0% on the can. Buy this one to taste what removing alcohol from a finished beer does, since you can compare it directly with the original.
Heineken 0.0, in almost every supermarket and airport in the country, at 69 calories per 12 ounces. Brewed and then dealcoholized by vacuum distillation, with flavourings blended back afterwards. It is the easiest one to find and it demonstrates the same route as Guinness in a pale lager.
The comparison that teaches the most
Guinness 0.0 next to ordinary Guinness Draught, at the same temperature, on the same evening. Same brewery, same recipe, one extra step. Everything you notice as different is the work that alcohol was doing, and you will find it is less about flavour and more about weight and about what happens after you swallow.

Which Connecticut brewery, founded in 2017 and making nothing but non-alcoholic beer, was the sixth largest craft brewing company in the United States by volume in 2025?

Athletic Brewing, which climbed from eighth in 2024 to sixth in 2025 and is the first brewery of real size ever built on this category alone. Sierra Nevada is the tempting answer because it is second on that same list, and it makes ordinary beer. Heineken is not a craft brewing company under the definition used for the ranking.
Guinness 0.0 is a different recipe from ordinary Guinness, designed from scratch to be non-alcoholic.

That is what makes it such a useful teaching beer: put it next to the original and every difference you notice is the work the alcohol was doing.

Two different non-alcoholic beers differ in a dozen ways at once and teach you nothing about the process. The IPA against hop water is a fine experiment for something else, since it shows you what malt contributes.

11.1.3.1 Asking for it, and what to eat
One question at the bar, one sentence for the table, and food that works because of what is missing.
At the bar
Ask what they have non-alcoholic. Most bars now carry at least one and many keep it out of sight under the counter.
Ask how long they have had it. This matters more here than for any other beer on the list, and the reason is on the next slide.
Ask for the proper glass. If they have Guinness 0.0, ask for it in a pint glass rather than handed to you in the can.
A full pour is right. There is nothing to moderate and no reason to take a small one.
Serve it cold, at 38F to 45F, which is 3C to 7C. Cold suits these beers because it firms up a light body.
Tip exactly as you would for anything else. Bar staff did the same work.
The sentence for the table
You do not owe anybody a reason. I am good with this one is a complete answer and almost nobody pushes past it. If someone does push, repeating the same four words without adding anything new works better than any explanation, because an explanation invites a negotiation.
Ordering a non-alcoholic beer rather than a soft drink is often the easier route socially, because you are holding the same kind of glass and doing the same thing as everybody else. That is a real and slightly undignified reason and it is worth saying out loud.

Very spicy food
This is the standout, and the reason is the missing alcohol. Ethanol dissolves capsaicin and spreads chilli heat around your mouth, so a strong beer makes a hot dish hotter. A cold, bitter, carbonated drink with almost no alcohol does the opposite.
Fried chicken, pizza, burgers
Cutting. Bitterness and carbonation scrub fat off your tongue, and a hoppy non-alcoholic beer has plenty of both. This is the same job a pale ale does and it does it about as well.
Brunch, and anything eaten before evening
Practicality rather than chemistry. This is the only beer in the course you can drink at eleven in the morning and still be useful afterwards.
Salty snacks, crisps, olives, nuts
Matching and refreshing at once. Salt makes you want another mouthful, and there is no reason here not to have one.
Grilled vegetables and lighter plates
Staying out of the way. A lighter body is usually a disadvantage in this category, and next to a delicate plate it turns into an advantage.
What to keep away from it
Rich desserts and anything very sweet. These beers already carry unfermented sugar, and putting them next to a sweet plate makes them taste flabby. A rich, slow braise will also simply swamp them.

There is a second reason to insist on it: when you are not drinking, the glass is a larger share of what you are buying. A tumbler is the tempting answer if you are thinking of it as a soft drink.

Cool, cut, timing, match, and one case of a weakness turning into a strength. The curry is the one worth remembering, since ethanol genuinely does dissolve capsaicin and carry chilli heat further around your mouth. A strong beer makes a hot plate hotter, and this one does not.

Heat, fat and delicacy are all handled well, the last one because a light body stops being a problem next to a light plate. The dessert is the trap. These beers already carry sugar the yeast never reached, so a sweet plate makes them taste flabby rather than refreshing.
11.1.3.2 Judging one, and the boiled off myth
The one fault that defines this category, the number that matters if you are avoiding alcohol, and the correction that gets the process backwards.
What a good one does
No worty character. Nothing that tastes of raw sweet liquid, canned sweetcorn or cooked vegetables.
A real aroma. Modern examples smell of hops or malt clearly, and a beer with almost no smell has usually lost it in processing.
Enough carbonation to give the mouthfeel some structure, meaning the way the beer feels rather than the way it tastes.
A finish that is dry rather than sticky. Sweetness is the easiest failure here and the hardest to hide.
Worty character, and the defining fault of the category. It comes from sugar the yeast never fermented and from a family of compounds including 3-methylbutanal and methional. Almost all of the improvement in these beers over the last decade has been about removing it.
Almost no aroma at all
Aroma stripped during dealcoholization and never put back. Ethanol carries volatile compounds with it when it leaves, and a brewery that does not compensate afterwards ends up with a beer that smells of nothing.
Wet cardboard or a stale papery note
Oxidation, and it hits this category harder than any other. Alcohol is a preservative, so a beer without it goes stale faster and is more easily spoiled. Check the date and buy the newest can on the shelf.
Sour, cloudy or fizzing oddly when opened
Spoilage. With no alcohol to hold microbes back, producers rely on pasteurisation or fine filtration instead. When that goes wrong there is nothing else standing in the way.
Thin and empty in the middle of the mouth
The unavoidable one. Ethanol contributes weight as well as warmth, so its absence always costs something. A good brewery narrows the gap and nobody closes it.
One general point transfers. Judge this category on what it did with the constraint, not on whether it tastes like the full strength beer. A non-alcoholic IPA that is clean, aromatic and dry is a success, even though it is lighter than the beer it is copying.
The number, once more, plainly
Non-alcoholic means under 0.5% alcohol by volume in the United States. It is not zero. If you need zero, the phrase to look for is alcohol free. By federal rule it may only be used on a malt beverage containing no alcohol, and products marked 0.0% are aiming at that line.
This is worth repeating rather than mentioning once, because it is the only fact in this module that could actually matter to somebody. If you are avoiding alcohol for a medical reason, in pregnancy, or in recovery, take that number to a doctor or a sponsor rather than to a beer course.
Non-alcoholic beer is just beer with the alcohol boiled off
Two things are wrong with that. Only one of the three routes removes alcohol at all, and the other two prevent it from being made. A brewer can stop the fermentation early, or use a yeast that cannot eat the main sugar in wort and therefore never produces much alcohol in the first place.
And the removal route is not a boil. Boiling beer at ordinary pressure would wreck it. Vacuum distillation lowers the pressure so the alcohol leaves at a gentle temperature, and reverse osmosis uses a membrane and pressure with no heat at all. Guinness describes its own method as cold filtration and says specifically that it avoids thermal stress.
Two smaller corrections travel with this one. This is not a new idea. American brewers were making beer just under 0.5% during Prohibition and calling it near beer. The legal threshold you read on a can today is that same number, inherited from the Volstead Act of 1919.
And the category is not a niche any more. Circana tracked about 583 million dollars of American retail sales in the year to December 2025, up 22.1%. NIQ puts non-alcoholic beer at 2.5% of American beer by volume, more than double its 2021 share. The largest maker, Athletic Brewing, was the sixth largest craft brewing company in the country by volume in 2025.

The sweetcorn note is worty character and is the defining fault of the category, meaning sugar the yeast never fermented. The missing aroma usually means it was stripped during dealcoholization and never put back. Cardboard is oxidation, and it hits these beers hardest because there is no alcohol acting as a preservative.

Light bodied and lively, with a short clean finish. It stops quickly, and it leaves your mouth ready for food or for another mouthful. There is genuine alcohol in it, so it carries flavour in a way an alcohol free beer cannot.

A table beer is a beer built to be weak. That sounds like an insult and it is a design brief. The brewer chooses 3% at the start and then spends the whole recipe putting flavour back in, which is a harder job than brewing something strong.
This is the line that separates it from the beers in 11.1. A non-alcoholic beer is under 0.5% by law, and it got there by having its alcohol removed or by never making much. A table beer is low by design, and the alcohol that is left is doing useful work.
The physical tell
Watch how fast the glass empties. The finish is short and clean, so there is nothing asking you to pause between mouthfuls. Then notice what happens after two of them, which is very little. That combination, easy to drink and easy to stop, is the whole point of the category.
Where it came from
Belgium called it tafelbier, or biere de table, and it was the ordinary drink at family meals. It was served in Belgian school canteens until the 1970s, when the law changed to keep beer away from under sixteens. Piedboeuf, at 1.1%, was the most popular of them.
Britain arrived at the same idea through tax. Eighteenth century law sorted beer into strong, table and small, and taxed the three at different rates. Small beer was often made by running water a second time through a mash that had already made a strong beer.
The category nearly disappeared. The last Belgian brewery making only table beers, De Es of Schalkhoven in Limburg, stopped in 1992. American brewers have been rebuilding it since the 2010s, usually with more hops and more character than the originals had.
Sources disagree
Whether table beer is a style at all, and what strength counts.
BJCP 2021. No table beer entry exists. A brewer entering one would have to use the historical beer category and write their own description for the judges.
Brewers Association 2026, Belgian-Style Table Beer. A recognised entry. Roughly 0.5% to 3.5% ABV, low bitterness at about 5 to 15 IBU, and a colour range wide enough to cover pale gold through black.
The two are not describing the same thing. The Brewers Association is describing the surviving Belgian drink, which is very weak and very quiet. BJCP does not describe it at all, so the modern American table beer has no official home. In a taproom in 2026, expect 2% to 4% and expect more hop character than any Belgian original ever had.
What the label may legally say
In the United States the words low alcohol and reduced alcohol may only be used under 2.5% by volume, and non-alcoholic only under 0.5%. So a 3.5% table beer is not allowed to call itself low alcohol, even though that is plainly what it is. Read the number rather than the adjective, every time.

Light body, a short finish and a big head are all designed in, because the brewer is fighting to keep flavour without alcohol. A thick lingering coat is the trap. That comes from alcohol and heavy malt, and it is exactly what a table beer cannot have.
A 3.5% table beer may be sold in the United States with the words low alcohol on the label.

What is the Flemish word for table beer, the one you will see on old Belgian bottles?
Answer: tafelbier
Tafelbier, or biere de table in French. It was the everyday drink at Belgian family meals and in school canteens until the 1970s. Tischbier is the tempting answer because it is the correct German construction, and it is not the word that ended up on the bottles.
11.2.1.2 Getting flavour out of 3%, and the drinks either side
Four decisions put body and smell into a beer that has very little alcohol to carry either.
Decision one: mash hot, and leave sugar behind
Mashing is the hot soak that turns grain into sweet liquid, called wort. Mash at the cool end and the yeast can eat almost all of it, which gives a thin dry beer. Mash hotter and you make larger sugars called dextrins, which the yeast cannot eat.
Those dextrins stay in the finished beer and give it body without giving it alcohol. It is the single most useful trick in low strength brewing, and it is why a good table beer does not feel like watered down lager.
Decision two: pick grain that tastes of something
Wheat and oats hold on to body and build a thick lasting head. A little flavourful malt goes further here than it would in a strong beer, because there is nothing else competing. Some brewers add a small amount of acidity, which makes a light beer taste fuller rather than sour.
Decision three: hop for smell, not for bitterness
Bitterness in a thin beer has nowhere to hide and turns harsh quickly. Hops added late give aroma instead, and aroma is what makes a small beer feel generous. The Belgian originals used almost no hops at all, and modern American versions lean on them heavily.
Decision four: carbonate it properly
Bubbles lift aroma out of the glass and give a light beer some presence in your mouth. A flat table beer is a sad thing. This is one style where a lively pour genuinely changes how much you enjoy it.

Design against removal is the difference, and the numbers follow from it. A table beer at 3% carries seven times the alcohol of a 0.4% one, which matters if you are driving. It also tastes fuller, because alcohol carries aroma and adds weight.
Table beer is made by taking the alcohol out of an ordinary beer.

False. That describes most non-alcoholic beer. A table beer starts small: less grain, a hotter mash for body, late hops for smell, and lively carbonation. Nothing is removed, which is exactly why there is more flavour left in the glass.

Two of these are defined by law, one by tradition, and two by marketing. Light lager is the one that catches people out, and it is the one with consequences, because somebody driving can pick it up believing it is the weak option.

This is the most practical style in the module, so the predicting and the ordering are worth more than the history.
Order one if any of these is true tonight
You are out for four hours and want a drink in your hand for most of them.
You want to keep tasting things. A weak beer between strong ones resets your mouth and your judgement.
You are eating a long meal. This is the drink Belgian families put on the table for exactly that reason.
You have work in the morning, or you are driving later and pacing carefully.
Leave it for tonight if either of these is true
You want one memorable beer. This style is built for the third glass rather than the first.
You want richness and weight. A table beer is light on purpose, and asking it to be heavy is unfair.
Ordering it
Most American bars will not have a heading called table beer. That does not matter, because the question you want to ask is about the number rather than the name.
Exact words
What is the lowest strength beer you have. Six words, and it works everywhere. Bar staff know this list.
Anything under four percent. A useful follow up if the first answer is a 5% lager.
A full pour, please. There is no reason to take a half of a beer this size, and pacing is the point.
If nothing under 4% exists, ask for a mild, a Berliner Weisse or an ordinary bitter. All three are genuinely weaker than most of the menu, and all three are taught elsewhere in this course.
One practical note about pace. A table beer at 3% gives you roughly two thirds of the alcohol of an ordinary pint, so three of them sit near two ordinary beers. That is the arithmetic that makes a long evening work, and it is worth doing once rather than guessing.

Length, pacing and daytime drinking are all problems this style was designed to solve. The single celebratory beer is the trap, because a table beer is built for the third glass rather than the first. For one memorable drink, order something with more to say.

Answer: Tumbler. A plain straight sided glass with no stem
A plain tumbler, because this was an ordinary drink served in whatever was already on the table. The snifter is the tempting answer for anybody who has learned that special beers get special glasses. A snifter concentrates the aroma of a strong beer you sip slowly, which is the opposite job.
Name the Texas farmhouse table beer, at 2.9% in 16 oz cans, that is the clearest American example of this category.

Le Petit Prince, from Jester King in Austin. Light Hearted is the tempting answer because it is easier to buy and it is a light IPA rather than a farmhouse beer. River Trip is at the top edge of the band at 4.8%, which makes it a session ale in everything but name.
Bell's Light Hearted Ale is a non-alcoholic beer.

False. It is 3.7%, which is more than seven times the 0.5% ceiling for non-alcoholic beer. It is a genuine low strength beer, sold nationally, and it will affect you if you drink several. Low calorie and low alcohol get printed in similar type, and only one of them is legally defined.

The first three are pacing problems, and pacing is exactly what this style is for. The last two describe somebody who wants a Wee Heavy or an Imperial Stout. Recommending by strength as well as by flavour is a habit worth building, because it decides how the evening ends.

What does not work: barbecue, blue cheese, chilli heat, and anything smoked. A table beer disappears underneath all of them. That is not a flaw, it is what happens when a deliberately quiet drink meets a very loud plate.
What a good one does
It tastes like a proper beer that happens to be small. There should be aroma, a real head, some body, and a clean short finish. You should finish the glass and want another, which is the only test this category truly has to pass.
The faults this style suffers from most
Thinness comes first. A watery table beer means the brewer simply used less grain and changed nothing else. There is no body, the finish is empty, and the aroma has nothing to sit on.
A sweet cereal flavour is the second. Wort is the sweet liquid made before fermentation, and a beer that still tastes of it has been stopped short or made with too little yeast activity. It reads like unfinished beer, because that is what it is.
Staleness is the third, and it arrives faster here than in stronger beer. Alcohol protects flavour, so there is less protection in the glass. Treat a table beer like a hoppy pale ale: buy it new and drink it soon.
One more worth naming. Some modern Belgian table beers are sweetened after fermentation, which is a legitimate choice and not to everybody's taste. If a very weak beer is also very sweet, that is usually why.
They did not drink it because the water was unsafe
The usual story is that people drank weak beer for centuries because water would have killed them. Historians have taken this apart repeatedly. Medieval and early modern people drank water routinely, and records from thirteenth century London show workers offered beer or water as alternatives.
Small and table beer were popular for better reasons. They were food, they carried calories, they tasted of something, and there was no tea or coffee yet. Brewing also used grain that a poor household could not always spare, which made beer a treat rather than a substitute for the well.
The correction matters here because it changes what the style is for. Table beer is not a safety measure that survived by accident. It is a drink people chose, at a strength that let them have several with a meal.
Worth remembering

Three words that carry the whole distinction. Built small means the brewer chose 3% at the start and then designed around it. Not shrunk separates it from the beers in 11.1, which reach their number by having alcohol removed. Everything else on these screens follows from that difference.

Why weak beer goes stale faster. Alcohol slows down the reactions that spoil flavour. Less alcohol means less protection, so a low strength beer needs a newer date code. Taught once, in Module P2.
Your 3% table beer is watery, with no aroma and an empty finish. What did the brewer most likely get wrong?

Simply using less grain is how a weak beer becomes a thin one. A hotter mash is the tempting answer because it sounds like a mistake, and it is actually the main fix, since it leaves body behind. High carbonation also helps rather than hurts, by lifting aroma out of the glass.

Three mechanisms are at work: staying quiet, cutting fat with bubbles, and avoiding a clash. The salad is the one people miss, because bitterness and vinegar together taste metallic, and a beer this gentle simply does not enter that fight.
Somebody says table beer is just watered down beer for people who cannot handle a real one. Which corrections are accurate?
Answer: It is designed low from the first decision, not diluted afterwards · A hotter mash leaves body behind, so it need not be thin · It was the ordinary mealtime drink in Belgium for generations
The first three are true and worth saying, and the mash point is the one that convinces people, because it explains how the flavour survives. The fourth is the trap and it is backwards. Non-alcoholic beer is under 0.5%, so a 3% table beer carries several times more alcohol.
Put these four steps in the order you would use them to plan a long evening around a table beer.

Ask, check, pour, then plan the strong one. The second step is the one that saves you, since light and session mean nothing legally and can hide a 5% beer. The last step is why the style exists at all, because thirst and appreciation want different beers.

One drink, and it is not beer. Hop water is carbonated water with hops in it: no malt, no fermentation, no alcohol. It is on more taps every year, and it solves a problem that nothing else on the bar solves as well.

Nobody is expected to memorise this screen. There is one drink on it, and it is here because you will meet it on tap lists and because it is useful, not because it is a beer style. It is not a beer at all, and that is the first and most important thing on the card.

Hop Water
Carbonated water with hops steeped in it. No grain, no fermentation, no yeast and no alcohol, so it is not beer and no rulebook covers it. It smells convincingly like an IPA and then arrives in your mouth with nothing behind the smell. Zero calories in the plain versions, and now on tap in a great many bars.

Hop Water
What it is, the gap between the smell and the mouth. It smells like grapefruit, pine or mango, exactly like a hoppy beer, and then it is water. There is no weight on your tongue and nothing at all after you swallow. Perfectly clear, with a fizz that fades fast and a head that never really forms.
Where it is from, the United States, and it is very new. A few small brands were making it before 2020 and the category grew quickly after that. HOP WTR launched in 2020 and Constellation Brands bought it in March 2026, which is a fair marker of how seriously drinks companies now take it.
Why it tastes that way, the maker steeps hops in cold carbonated water and stops. Nothing is mashed, boiled or fermented, so none of the sugar, body or alcohol that beer gets from grain is ever made. Hop aroma dissolves in water on its own, which is the entire trick.
Confused with, non-alcoholic beer at 11.1, which is made from grain and still has body, calories and up to 0.5% alcohol. Sparkling water, which has no aroma. A soft drink, which has sugar in it. Non-alcoholic beer is the important one, because the two sit side by side on the same menu.
Numbers, 0.0% ABV, and no IBU or SRM at all. The plain versions carry zero calories, zero sugar and zero carbohydrate, and fruit flavoured versions run to about 15 calories per 12 ounces. There is no bitterness figure because there is no boil to make one.
You will probably, find it refreshing or find it hollow, and both reactions are common. If you like the smell of an IPA more than the drinking of it, you will get on with hop water. If you want something in your mouth, you will not.
Ordering it, do you have hop water. If not: anything non-alcoholic that is not sweet. Ask for it in a glass rather than the can, and take a full pour.
Eat with, anything salty or fried, because bubbles and bitterness scrub fat without adding weight. It is also the best thing here next to very spicy food, since there is no alcohol at all to carry the heat further around your mouth.
Is it any good, as a drink it is pleasant and thin, and it will not replace beer for anybody. As a tool it is excellent. It is the cheapest and lightest way to keep a glass in your hand for another hour.
Try this one, Sierra Nevada Hop Splash, made with Citra and Amarillo hops, sold in cans in supermarkets nationwide and shipped to the lower forty eight states. HOP WTR is the other easy one, sold direct and in shops. It adds adaptogens, which are plant extracts sold on a wellness claim that is not well supported, so buy it for the taste rather than the promise.
The myth, it is not non-alcoholic beer and it is not a low alcohol beer. There is no malt in it and it was never fermented, so it has no alcohol to remove. The word hop on a can does not make something beer.
Remember, the smell of the beer with none of the beer.
Why this one earns a card
The useful thing about hop water is social rather than sensory. Halfway through an evening you may want to stop drinking and stay where you are. A glass of water announces that. A hop water does not, because it looks like everybody else's drink and comes from the same taps.
It is also the cheapest thing on most bar menus, it has no calories, and there is no ceiling on how many you can have. If you are pacing yourself across a long evening, alternating is the whole method, and this is the lightest thing to alternate with.

Grain is the dividing line and everything else follows from it. The calorie rows are the ones people misfile, because both drinks are sold as the healthy option on the same shelf. Only one of them is beer, and only one of them can legally contain any alcohol at all.
A pint glass arrives smelling strongly of grapefruit and mango. It is perfectly clear, there is no head, and there is nothing in your mouth after you swallow. What are you holding?

The gap between a big smell and an empty mouth is the tell, and clarity with no head confirms it, since head comes from grain protein. A non-alcoholic IPA is the tempting answer because the aroma is nearly identical, and it is made from malt so it has some body, some colour and some calories. A session IPA is a full beer at 4% to 5%.

Five drinks, three of them with no alcohol worth counting. Hop water sits between sparkling water and non-alcoholic beer: it has the aroma of the beer and the weight of the water.
The comparison that teaches most is hop water next to a non-alcoholic IPA, at the same temperature, on the same evening. Both smell like the same beer. Everything you notice as different is what the malt was doing, which turns out to be body, colour, sweetness and the whole of the finish.
Sources disagree
Whether hop water belongs in a beer style guide at all.
BJCP 2021 and Brewers Association 2026. Neither has an entry. Both define beer as a fermented drink made from grain, and hop water is neither fermented nor made from grain, so it falls outside both books entirely.
The trade, in 2026. Breweries make it, bars pour it from beer taps, and shops shelve it with beer. NielsenIQ put United States hop water sales at about 28.5 million dollars, inside a non-alcoholic beer segment that grew 22% in 2025.
Both are right about different questions. It is not beer by any technical definition and nobody in brewing claims otherwise. It is sold, poured and drunk as though it were, which is why it is in this course. Treat the classification as settled and the shelf position as the reason you need to know about it.

Hop aroma dissolves in plain water without any help from grain, yeast or alcohol. That one fact explains the whole drink. It is why it smells like an IPA, why there is nothing behind the smell, why it has no calories, and why no style guide has an entry for it. It also explains what it is for, which is holding a glass that looks like everybody else's while you stop drinking.

False, and it is the confusion this card exists to fix. Hop water is water, carbon dioxide and hops, with no grain and no fermentation, so there was never any alcohol in it to remove. Non-alcoholic beer is brewed from malt and then has its alcohol taken out or arrested, which is why it still has body, colour and calories.
It is half past nine and you want to stop drinking but stay out with everybody. Which of these are good reasons to order a hop water rather than a glass of tap water?

The first three are the whole case for the drink, and the social one is the strongest. Ordering something that looks like a drink stops the conversation about why you have stopped, which is the part most people find hard. The fourth is the trap and is simply not true: there is no alcohol in it at all, at 0.0%, and no drink gives you warmth without ethanol.
