Module F3, How to taste

A four step drill, a vocabulary that belongs to you rather than to beer writers, and some cheap experiments that teach more than reading does.

The four step drill

Four steps, about thirty seconds, and it works on any beer anyone hands you. Most of what you will notice does not arrive until after you have swallowed.

By the end of this class you will be able to

  1. Run the same four step sequence on any beer, without thinking about it
  2. Get the smell out of a glass in one sniff instead of six
  3. Say why the flavour turns up a beat after you swallow, and use that

F3.1.1 Look, then smell

The first two steps take about ten seconds between them, and one of them is less useful than it feels.

  1. Look at it. Five seconds, no more.
  2. Smell it. One normal sniff, nose actually inside the glass.
  3. Take a mouthful and let it cover your whole mouth.
  4. Swallow, then breathe out through your nose and wait.

That is the drill. It is the same four steps every time, which is the point. A sequence you always run gives you something to compare against. A different approach every time gives you nothing.

Why colour is not strength. Colour comes from how hard the grain was roasted. Guinness Draught is black and 4.2%, which is weaker than a Budweiser.

Your eyes do not just report. They vote.

In 2001 a team at the University of Bordeaux gave 54 wine students two glasses to describe. Both held the same white wine. One had been dyed red with a tasteless dye. The students described the red one using red wine words, and did not notice they were describing the same liquid twice.

That study is Morrot, Brochet and Dubourdieu, and it is about wine, but the mechanism is not about wine. Colour changes what your nose reports. So look at the beer, then set what you saw aside before you smell it. If you want to know how strong the effect is on you, get someone to hand you a glass without saying what is in it.

One sniff, and put your nose inside the glass

Hold the glass under your nose so the rim sits between your eyebrows and your top lip. Then take one ordinary sniff, the kind you would use on a carton of milk. That is it.

The reason it is one sniff and not six is measured. David Laing tested this in 1983 and found that a single natural sniff gives as much information about what is there and how strong it is as seven or more sniffs do. The average natural sniff lasts about 0.4 seconds. Sniffing harder and longer does not add anything, and it starts to tire the nose out.

The one honest exception is complicated smells. When several things are mixed together, a few more sniffs can help. A beer is a mixture, so two or three sniffs is reasonable. Thirty seconds of hard inhaling is not.

You do not need to swirl beer

Swirling works on wine because wine is still. There is nothing else moving the smell out of the glass, so you have to do it yourself.

Beer has bubbles. Carbon dioxide is coming out of the liquid the whole time you are sitting there, and it carries the aromatic compounds up with it. The beer is already doing the work. Swirling mostly knocks the foam down. The exception is a beer that has gone flat and quiet, where a gentle turn of the glass does help.

    Look, smell, sip, swallow. The order matters for one reason above the others: smelling has to happen before drinking, because once you have a mouthful of beer your nose is busy with a different job. People who reverse those two lose the aroma step entirely and never notice.
  2. Sniffing harder and for longer gets more smell out of a glass.
    Answer: False
    False. Laing measured this in 1983 and found one natural sniff gives as much information about presence and intensity as seven or more. The belief is understandable, because effort usually helps. Here it does the opposite: long hard sniffing tires the nose out, and a tired nose reports less.
  3. Before you read on. How long does one ordinary natural sniff last?
    Answer: 0.4seconds. Think about actually sniffing a carton of milk to check it. Time the movement in your head.
    About 0.4 seconds, so under half a second. Most people guess one or two seconds, because a deliberate sniff feels like a slow thing when you imagine doing it. Your nose gets what it needs in a fraction of a second, which is exactly why the extra six sniffs add so little.
  4. You have drunk a third of the glass. Click where you look for lacing.
    Answer: The inside of the glass above the beer
    Lacing is the pattern of rings foam leaves on the glass wall as the level drops. It tells you the glass was properly clean and the foam held together. It is the most over-read thing in beer: people treat heavy lacing as proof of quality, and it is mostly proof of washing up.
  5. Which of these can you honestly read off the look of a beer?
    Answer: Whether to expect roast flavours such as coffee or cocoa
    Only the first. Dark colour means grain was roasted, and roasted grain tastes of roast, so that prediction holds up. Haze is the trap: a wheat beer and a hazy IPA are cloudy by design, an old lager might be cloudy by accident, and the glass looks the same either way. Strength and bitterness are invisible.
  6. What happened in the 2001 Bordeaux study where white wine was dyed red?
    Answer: Students described the dyed glass in red wine words and did not notice it was the same wine
    They described it as a red wine. The tempting answer is that trained people would see through it, because that is what training is supposed to buy. These were oenology students, so about as trained as a young taster gets, and the colour still steered their descriptions. Vision runs first and the rest of you follows it.
  7. One word for why a beer does not need swirling the way wine does.
    Answer: bubbles
    The bubbles. Carbon dioxide leaving the liquid carries aromatic compounds up to the surface continuously, so the glass is already delivering its own smell. Foam is the tempting answer and it is close, because foam is made of bubbles, but the head is the result rather than the mechanism.
  8. Sort what the head on a beer does and does not tell you.

    Foam is mostly a report on the glass and on the proteins in the beer. A trace of butter from a bar snack, or a rinse aid film, will flatten the head on a perfectly good beer. Freshness is the tempting one, because a tired beer often does look dull, but plenty of stale beer still foams happily.
  9. Where should the rim of the glass sit when you smell a beer?
    Answer: Inside the glass, with the rim roughly between your top lip and your eyebrows
    Nose inside the glass. Aromatic compounds spread out and thin fast in open air, so a glass held away from you delivers a fraction of what it holds. Holding it low feels more polite and more like what people do in films, and it throws most of the smell away.
  10. Heavy lacing down the side of the glass mostly tells you the glass was clean.
    Answer: True
    True. Lacing needs stable foam and a surface with no grease on it, and that is about all it reports. It gets treated as proof of quality because it is visible, persistent and easy to photograph. A dirty glass will strip lacing off an excellent beer, and the beer will still taste excellent.

F3.1.2 The sip, and the part after you swallow

Steps three and four. The fourth one is where nearly all of the flavour turns up.

Take a mouthful, not a sip

A polite little sip wets the front of your tongue and nothing else. Take enough to move around your whole mouth, hold it for two or three seconds, and let it touch everything.

You have somewhere between 2,000 and 5,000 taste buds, and they are not all on your tongue. There are buds on the roof of your mouth, along the sides, at the back, and down into your throat. A sip that only reaches the tip of your tongue misses most of them.

The tongue map is wrong, and it was always wrong

The diagram with sweet at the tip, salty and sour along the sides and bitter across the back was printed in school textbooks for most of a century. It is not a simplification. It is an error.

It came from a German paper by Dirk Hanig in 1901, which measured small differences in how sensitive each part of the tongue was. In 1942 Edwin Boring redrew those graphs for an American textbook, and later writers read the low points as meaning no sensation at all. Virginia Collings tested it properly in 1974 and found every taste is detectable everywhere on the tongue.

What this means at a bar: there is no point tipping a beer towards the back of your tongue to find the bitterness. Cover your whole mouth and the bitterness will find you.

Swallow, then breathe out through your nose

This is the step that changes how much you get out of a beer, and almost nobody does it on purpose.

There are two routes from a smell to your nose. Through your nostrils, which is what happens when you sniff the glass. And up the back of your throat from inside your mouth, which happens when you breathe out after swallowing. The researcher Paul Rozin put it as simply as it can be put: smelling in is one sense, smelling out is another.

The two do not even deliver the same result. Rozin trained people to recognise smells through the nostrils in 1982, then presented the same smells from inside the mouth, and their success rate dropped hard. So the smell of a beer in the glass and the flavour of the same beer in your mouth are genuinely two different experiences, and you have to collect them separately.

The instruction is short. Swallow. Close your mouth. Breathe out gently through your nose. Then wait about ten seconds and notice what is still there and what has gone.

Nobody has measured that 80% figure

You will hear that 80% of taste is really smell. Or 75%, or 90%, or 95%. All four numbers are in print, often in the same week.

Charles Spence traced them in 2015 and found they all lead back to one 1977 experiment with six trained panellists and two chemicals in water. That study found up to 80% of the "taste" vanished when the nose was blocked, for those two chemicals. It was never a measurement of food, or of beer, or of people in general.

The honest version keeps the direction and drops the number: smell does most of the work in flavour, for most things you eat and drink. Anyone quoting a percentage is quoting a rumour.

The direction is not in doubt, and beer research shows it directly. In 2022 a team gave people dry hopped beers to taste with and without nose clips, and how bitter the beer seemed changed depending on whether the aroma was getting through. Smell is not decoration sitting on top of taste. It edits the taste.

Two things that change what you can detect

Temperature. Cold suppresses what you perceive. When Barry Green and Susan Frankmann cooled the tongues of their volunteers from 36C, which is 97F, down to 20C, which is 68F, the sweetness of sugar dropped noticeably. Cooling the tongue mattered more than cooling the drink did. Separately, a colder liquid simply releases fewer aroma molecules into the air above it. A beer straight out of a very cold fridge is a quieter beer. Give it five minutes in the glass and taste it again.

The first mouthful. The first one lands in a mouth that has been tasting nothing but its own saliva, with nothing to compare against, and it is usually the coldest. Sensory panels do not judge anything on a first sample for those reasons. Neither should you. Take a second mouthful and make your decision on that one.

Four steps in a fixed order. The first is quick and slightly untrustworthy. The second is one sniff. The third covers your whole mouth. The fourth is the one everybody forgets, and it is where the flavour actually arrives.

  1. Before you read on. Guess how many taste buds you have.
    Answer: 4000taste buds. There is a round number people quote at parties. The real figure is a range, and it counts buds that are nowhere near your tongue.
    Between 2,000 and 5,000. The number people quote is 10,000, which is roughly double the top of the real range. The more useful half of the fact is where they are: on the roof of your mouth, along the sides, at the back and into your throat, not just on the tongue.
  2. To taste the bitterness in a beer properly, roll it towards the back of your tongue.
    Answer: False
    False. Every taste is detectable everywhere on the tongue, which Virginia Collings established in 1974. The tongue map came from a 1901 paper about small differences in sensitivity, redrawn in 1942 and then misread for decades. It survives because it was on a diagram in a school textbook, and diagrams are hard to unlearn.
  3. Why does the flavour of a beer seem to arrive a moment after you swallow?
    Answer: Breathing out pushes aroma from your mouth up the back of your throat into your nose
    Smell reaches your nose by two routes, and the second one runs from inside your mouth up the back of your throat on the breath out. That is the delay you notice. The back of the tongue answer is the tongue map talking, and warming is real but far too slow to explain a one second gap.
  4. Fill the gap. Swallow, close your mouth, then ______ through your nose.
    Answer: breathe out
    Breathe out. That single movement carries the aroma from the beer still in your mouth up into your nose, and it is where most of what people call flavour actually lands. Breathing in is the wrong instinct here, and it is the common one, because sniffing means inhaling everywhere else in life.
  5. Someone tells you 80% of taste is smell. What is the accurate correction?
    Answer: Smell does most of the work, but the percentage traces to one small 1977 study and means nothing
    The direction is sound and the number is folklore. Charles Spence traced 75%, 80%, 90% and 95% all back to a single 1977 experiment on six trained panellists with two chemicals in water. Picking a different number is the tempting answer, because it feels like the correction is about accuracy. The problem is that nobody measured any of them.
  6. Which of these genuinely change how much of a beer you can detect?
    Answer: How cold it is · Whether your nose is blocked · Whether it is your first mouthful or your second
    The first three. Cold suppresses both the aroma coming off the beer and your perception of sweetness. A blocked nose removes the route that carries most of the flavour. And a first mouthful lands on a mouth with no reference point. Which side of the tongue changes nothing, because the tongue map is not real.
  7. A beer straight out of a very cold fridge shows you less of its flavour than the same beer five minutes later.
    Answer: True
    True. Cold cuts both the aroma released into the air above the beer and your own sensitivity to sweetness. Five minutes in the glass will often turn a quiet beer into an obvious one. What confuses people is that very cold beer is more refreshing, which is a real thing and a different thing.
  8. Which part of the glass are you assessing when you take a mouthful and hold it?
    Answer: The beer itself
    The body of the beer, which is the liquid itself. Worth saying out loud because the first two steps of the drill are spent on foam and glass, and it is easy to spend the whole assessment on things that are not the beer. The head is worth five seconds. The liquid is worth the rest.
  9. Sort these into what your tongue does and what your nose does.

    Your tongue does a very small job: sweet, sour, salty, bitter and savoury. Everything with a name attached to it, every fruit and every roasted thing, is your nose. Coffee is the one people place wrongly, because coffee is famously bitter. The bitterness is taste. The coffee is smell.
  10. Which mouthful should you make your judgement on?
    Answer: The second, because the first lands with nothing to compare it against
    The second. Sensory panels discard first samples for exactly this reason. The clean mouth argument is the tempting one, and it is not wrong about the mouth. It is wrong about the brain. A first mouthful has no reference point, and it usually arrives colder than the rest. The last mouthful is warm, flat and follows everything else you drank.

You have a sequence you can run on anything, and you know which parts of it actually earn their time.

A vocabulary you actually own

Six words you can use honestly beat sixty you copied off a label. And one word in common use is so vague that two people using it are often describing opposite beers.

By the end of this class you will be able to

  1. Describe any beer in three words that mean something to you and to a bartender
  2. Separate what your tongue is doing from what your nose is doing from what your mouth is feeling
  3. Stop using the word hoppy, and say the two more useful things instead

F3.2.1 Words that carry information

A small honest vocabulary, built out of three questions you can always answer.

The problem with beer words is not that they are hard. It is that most of them are borrowed. You read that something has notes of stone fruit and pine resin, you find you cannot honestly tell whether it does, and you conclude the fault is yours.

It is not. Naming smells is a genuinely difficult task, and it is difficult for everyone. David Laing and Gillian Francis put people in front of mixtures of known smells in 1989 and asked them to list what was in there. Most people top out at around three components, whatever the true number is. Later work on mixtures of tastes found the same ceiling of about three.

So three words is not a beginner target. Three is close to the human limit. Build a vocabulary that gets you three good ones.

Question one: what is your tongue doing

Your tongue reports five things: sweet, sour, salty, bitter and savoury. That is the entire list. In beer you mostly meet sweet and bitter, with sour showing up in a few styles and salt in almost none.

This is a short answer and it is meant to be. Sweet or not sweet, bitter or not bitter, and roughly how much of each. Nobody needs more than that from step one.

Question two: what is your nose doing

Everything with a name attached to it lives here. Bread, biscuit, coffee, cocoa, caramel, grapefruit, orange, mango, pine, grass, pepper, banana, clove, hay, honey.

The rule that makes this usable: only say a word if the thing it names actually came to mind before you reached for a word. If you are working backwards from a list, you are guessing. It is better to say it smells of something sharp and green and leave it there.

Question three: what is your mouth feeling

This is mouthfeel, which just means how a beer feels rather than how it tastes. It is the most neglected third of the vocabulary and the easiest one to be honest about, because feel is much harder to imagine than flavour is.

Seven feel words. You can describe almost any beer with two of them.

Drying is worth a note. That rough, mouth stripping feeling has a technical name, astringency, and it is a different thing from bitterness even though the two arrive together constantly. Bitter is a taste. Drying is a texture.

Then two numbers, and you are done

  • How loud is it, from quiet to shouting. This is more useful than any adjective and nobody can argue with your answer.
  • How long does the finish last. Count the seconds after you swallow until your mouth is back to normal. Two seconds and twenty seconds are different beers.
Worked example: One beer, described honestly

A pale gold beer with a white head, in front of you, and you have run the four step drill on it.

  1. Tongue: not sweet. Bitter, and quite a lot of it.
  2. Nose: something citrus. Grapefruit, if you are being specific, and you are fairly sure about that one.
  3. Mouth: thin rather than full, and drying at the end.
  4. Loud, and the finish lasts about eight seconds.

Said out loud: "Dry and bitter, smells of grapefruit, and the bitterness hangs around." That is a complete description. It contains no words you borrowed, and a bartender can hand you another one like it.

Where the beer words came from

The flavour wheel on the wall of every brewery taproom comes from work by Morten Meilgaard with Charles Dalgliesh and John Clapperton, published in 1979, followed by a set of reference standards in 1982. Each term was tied to a chemical a panel could actually smell, so that two panels in two countries would use the word the same way.

That is what it was for. It was built to make trained panels agree with each other, not to help a person order a drink. It is a fine document and it is not your vocabulary.

    Caramel is the one that moves people around. It feels like a taste because caramel is sweet, and the caramel part is entirely smell. Sweetness is on your tongue, the flavour called caramel is in your nose, and you can prove it by pinching your nose and losing the caramel while keeping the sweet.
  2. Before you read on. Put a mixture of separate known smells in front of someone and ask them to name the parts. How many can most people name?
    Answer: 3smells. Think about how many things a tasting note usually lists. Then think about how many you have ever confidently picked out yourself.
    About three, and it barely moves with training. Laing and Francis measured this in 1989 and later work on taste mixtures found the same ceiling. Most people guess higher because published tasting notes routinely list six or eight, which tells you something about tasting notes rather than about noses.
  3. The word for how a beer feels rather than how it tastes.
    Answer: mouthfeel
    Mouthfeel. Thin, full, creamy, prickly, sticky, drying, warming. It is the third of the vocabulary that beginners skip, and the third that is easiest to be honest about. You cannot talk yourself into a feeling the way you can talk yourself into a fruit.
  4. Which of these does your tongue actually detect?
    Answer: Bitter · Sour · Savoury
    The first three. Sweet, sour, salty, bitter and savoury is the complete list of what taste buds report. Pine is a smell, and it reaches you either through your nostrils or up the back of your throat after you swallow. Everything with a name of its own is smell.
  5. Pair each feel word with what it describes.
    Answer: Thin with Watery. Slides away without filling your mouth · Creamy with Soft and rounded, often from nitrogen or oats · Drying with Strips the slipperiness out, like strong tea · Warming with Heat in the chest, from the alcohol
    These four cover most of what a beer can do to your mouth. Drying is the one worth practising, because it arrives alongside bitterness so often that people fuse the two into one word. They are separate, and separating them is one of the fastest upgrades available to a beginner.
  6. The beer flavour wheel was designed to help drinkers describe beer.
    Answer: False
    False. Meilgaard and colleagues built it in 1979 for trained tasting panels, and tied each term to a chemical reference standard so that panels in different countries would use words identically. It is a calibration tool for laboratories. It ended up on taproom walls, which is where the confusion comes from.
  7. You want a way of describing a finish that nobody can argue with. What do you do?
    Answer: Count the seconds after swallowing until your mouth feels normal again
    Count. Two seconds and twenty seconds are genuinely different beers, and the number is yours and honest. Comparing with the last one of the style is tempting and useful later, but it needs a memory you may not have yet. Elegant and clumsy are judgements dressed up as descriptions.
  8. Bitterness and a drying, mouth stripping feeling are two different sensations.
    Answer: True
    True. Bitter is a taste your tongue reports. Drying, which has the technical name astringency, is a texture you feel, closer to what strong tea does to your mouth. They turn up together in heavily hopped beers constantly, which is exactly why people fuse them into one sensation.
  9. You smell a beer and nothing specific comes to mind. What is the honest move?
    Answer: Say what you can. Sharp and green, or soft and sweet, is a real description
    Say the vague true thing. Working down a list is the tempting option because it produces a confident sounding answer, and what it actually produces is a guess you will then believe. Naming smells is hard for everybody. A rough honest description beats a precise borrowed one every time.
  10. Put the three questions in the order you can most reliably answer them.
    Answer: 1. What is my mouth feeling, from thin to full to drying 2. What is my tongue doing, sweet or bitter or sour 3. What is my nose doing, and can I put a name to it
    Feel first, taste second, naming last, because that is the order of difficulty. Feel is nearly impossible to imagine yourself into. Sweet and bitter are almost as reliable. Putting a name to a smell is the hardest of the three and the one everybody starts with, which is why beginners find beer describing so discouraging.

F3.2.2 Why hoppy is nearly a useless word

One word, at least four meanings, and two people using it are often describing opposite beers.

Ask five drinkers what hoppy means and you will get these five answers, roughly in this order.

These are not shades of one meaning. Rows one and two describe beers that are opposites.

Why one word ended up doing five jobs

Hops do two entirely separate things depending on when they go into the beer. Boiled for an hour, they give bitterness and almost no smell. Added cold at the end, they give smell and almost no bitterness. One ingredient, two unrelated results, and English gave them one adjective.

When hops go in, and what each timing does. Early hops bitter the beer. Late and cold hops perfume it. The same cone, two completely different jobs.

Two beers from the same brewery show how far apart the results can be. Sierra Nevada Pale Ale is 38 IBU. Sierra Nevada Hazy Little Thing is 35 IBU. Those numbers are almost identical and the beers are not remotely alike. The Pale Ale is dry and firmly bitter, with pine and grapefruit. The Hazy is fruity, soft and barely bitter at all. Both are called hoppy, constantly, by people who mean opposite things.

What IBU does and does not measure. It counts bitter compounds in a laboratory. Sweetness, body and water chemistry all change how bitter the beer actually tastes.

The replacement is two questions

  • How bitter is it, and how long does the bitterness stay after you swallow.
  • What does it smell of, and how loud is that smell.

Those two answers between them separate every beer that gets called hoppy. They also survive being said out loud to a stranger, which hoppy does not.

What to say at the bar instead
  • Instead of "something hoppy": "something that smells of citrus but is not too bitter."
  • Instead of "something really hoppy": "the most bitter thing you have, and I want it to last."
  • Instead of "not too hoppy": "not bitter, but I do not want it bland either."
  • Instead of "something smooth": "low bitterness, soft rather than fizzy."

Any bartender who sells more than four beers can act on all four of those. None of them require you to know a style name.

Three more words that fail the same way

A bigger vocabulary is not a better palate

The person listing eight aromas is not detecting eight aromas. Nobody is. Around three is the ceiling for naming components in a mixture, and it holds for trained people too.

What long tasting notes usually contain is three things that were noticed and five that were reasoned out from what the beer is supposed to taste like. That is not a scandal, it is just how writing works. It is a poor model to copy, because it teaches you to distrust your own nose.

Six words you own beat sixty you borrowed. The test is simple: could you have said it before you saw the label.

Two questions replace the word hoppy completely. The first is a taste and the second is a smell, they come from two different brewing decisions, and a beer can be loud in one and silent in the other.

  1. Before you read on. Sierra Nevada Pale Ale is 38 IBU. Guess the IBU of Sierra Nevada Hazy Little Thing, which most people find far less bitter.
    Answer: 35IBU. It is a modern hazy IPA. It is stronger than the Pale Ale, and almost nobody describes it as bitter.
    35 IBU, so three below the Pale Ale. Almost everybody guesses far lower, somewhere near 15, because the Hazy tastes so much softer. The measurement barely moved and the experience moved completely, which is the clearest single demonstration that hoppy is not one property.
  2. Two people say they want something hoppy. Sort what each one is actually asking for.

    One wants a taste and one wants a smell, and they come from hops added at opposite ends of the brewing day. Handing the second person a firmly bitter West Coast IPA gives them exactly the beer they did not want, and they will still call it hoppy afterwards.
  3. You like citrus smells and you dislike a bitter aftertaste. What do you say at the bar?
    Answer: Something that smells of citrus but is not too bitter
    Say what you want, in the two dimensions that matter. Hoppy but not too hoppy is the honest instinct and it gives the bartender nothing, because the word is doing both jobs in one sentence. Naming a style works when you are sure of the style, and it stops working the moment the bar does not have one.
  4. Two beers with almost the same IBU will taste about equally bitter.
    Answer: False
    False. Sierra Nevada Pale Ale at 38 IBU reads firmly bitter and Hazy Little Thing at 35 IBU reads soft and fruity. Sweetness, body, water and how the hops were added all move the result. The number is a real measurement of real compounds, which is exactly why it feels more trustworthy than it is.
  5. Pair each vague word with the specific thing people usually mean by it.
    Answer: Smooth with Not very bitter · Light with Pale, or weak, or thin. Three different things · Crisp with Dry finish, or sharp bubbles · Hoppy with Bitter, or aromatic. Often opposites
    All four collapse several properties into one word, which is why bartenders ask follow up questions. Smooth is the worst offender in practice, because it is also used to mean nothing more than "I enjoyed it", and that tells nobody anything.
  6. A tasting note lists eight distinct aromas. Which of these are fair conclusions?
    Answer: Some of those were reasoned out from what the style is meant to smell like · Nobody reliably names eight components in a mixture
    The first two. Around three is the ceiling for naming components, trained or not, so a list of eight is part perception and part knowledge of the style. That is normal in writing and a bad model for learning. The last two options are the ones that quietly teach beginners to distrust their own noses.
  7. Write the two questions that replace the word hoppy. Two words will do for the first one.
    Answer: how bitter and what does it smell of
    How bitter, and what does it smell of. One is a taste from hops boiled early, one is a smell from hops added cold at the end, and a beer can be loud in one and silent in the other. Splitting them is the single most useful thing in this class.

    Whether you would have said it blind. Once you have read the label, you cannot tell your own perception apart from what you were told to expect, and neither can anyone else. That is not weakness, it is how expectation works, and it is why blind tasting exists at all.

    Answer: False
    False. Plenty of bartenders will read it as "not too aromatic" and hand you a firmly bitter English bitter or a German Pils, both of which are quiet on the nose and definitely bitter. Say the property you care about. Not bitter is four characters longer and does the job.

    Timing. An hour in the boil gives bitterness and almost no smell. Cold at the end gives smell and almost no bitterness. Variety does change the character of the aroma, which is why it is the tempting answer, but it does not split bitterness from smell the way timing does.

You have a small set of words that are yours, and you can order without using the word hoppy.

Cheap experiments

Six comparisons you can run at a kitchen table. Each one teaches something no amount of reading will, and the whole set costs less than one round in a bar.

By the end of this class you will be able to

  1. Run a side by side comparison that isolates one variable
  2. Prove to yourself that most of flavour is smell, and that perception is not fixed
  3. Buy a specific pair of beers this week and know what you are looking for

F3.3.1 Three experiments that cost one beer

Any beer will do for all three, and two of them need nothing else from the shop.

A comparison teaches and a description does not, because a comparison gives you a difference to notice. Noticing a difference is easy. Noticing a property on its own is hard, and it is what tasting notes ask you to do.

Worked example: Experiment 1. Pinch your nose

Buy: one beer with an obvious smell. Sierra Nevada Pale Ale at 5.6% works well and is on every supermarket shelf. Cost: about three dollars for a single can. You need nothing else.

  1. Pour it. Do not smell it yet.
  2. Pinch your nose shut, firmly, and keep it shut.
  3. Take a mouthful. Move it around. Swallow. Keep pinching for five more seconds.
  4. Now let go of your nose and breathe out gently.
  5. Take a second mouthful with your nose free, and compare.

With your nose shut you get bitter, a little sweet, cold, fizzy and wet. That is it, and it is close to nothing. When you release your nose the grapefruit and pine arrive all at once, a beat late, on the breath out. That gap is the whole reason the drill has a fourth step.

Worked example: Experiment 2. The same beer, twenty minutes apart

Buy: one beer, any style, ideally something with a bit of malt to it. Cost: one beer. Take it straight from the coldest part of the fridge.

  1. Pour half. Leave the rest in the can or bottle on the counter.
  2. Taste the cold half. Write down three words. Actually write them.
  3. Wait twenty minutes. Do something else.
  4. Pour the rest and taste it against your three words.

The warmer half smells of more, tastes sweeter, and often tastes more bitter as well. Nothing was added. Cold suppresses both the aroma leaving the liquid and your own sensitivity, and letting it go is like turning the volume up. This is why a beer served very cold seems to have less in it, and it is a separate question from what temperature a style should actually be poured at.

Worked example: Experiment 3. A few grains of salt

Buy: one bitter beer, plus table salt you already own. An IPA or a German Pils works. Cost: one beer. You need two glasses.

  1. Split the beer between two glasses, as evenly as you can.
  2. Add three or four grains of salt to one glass. Not a pinch. A few grains.
  3. Swirl it once to dissolve, then swirl the other glass once as well so both got the same treatment.
  4. Taste the plain one, then the salted one, then the plain one again.

The salted glass tastes less bitter and rounder. Paul Breslin and Gary Beauchamp showed in the 1990s that sodium suppresses bitterness directly at the taste receptors, and that it works even at levels too low to taste salty. Two lessons come out of it. Bitterness is not a fixed property of the beer, and the salty snacks on the bar are quietly changing every beer you drink alongside them.

These add up

Six experiments across this class is about eight drinks if you finish everything. Do one per sitting, pour small measures, share them with someone, and tip the rest away when you have learned the thing. Nothing here requires you to finish a glass.

Write it down, badly

Three words per beer in your phone. Not a review. Something like "thin, lemony, gone in three seconds." It takes fifteen seconds and it turns a vague sense that you like some beers into a list you can look at.

The value shows up in about two months, when you read a note you have no memory of writing and find you agree with it.

Check yourself

  1. With your nose pinched shut, what is left of a beer?
    Answer: Sweet, bitter, cold, fizzy and wet, and very little else
    Almost nothing survives. Your tongue reports five tastes and your mouth reports temperature and texture, and that is the whole of what is left. The malt option is the tempting one, because bread and caramel feel more solid and less perfumed than fruit. They are smells too, and they go with everything else.
  2. Letting a beer warm up for twenty minutes reveals flavours that were already in the glass.
    Answer: True
    True, and the word already is doing the work. Nothing is added. Cold holds the aroma compounds in the liquid and blunts your own sensitivity, so warming simply stops hiding what was there. It is a volume knob rather than an ingredient, which tells you the beer was never the problem.
  3. A few grains of what, added to a bitter beer, will make it taste less bitter?
    Answer: salt
    Salt. Breslin and Beauchamp showed sodium suppresses bitterness at the receptors themselves, at levels too low to taste salty at all. It is the reason salted snacks change the beer next to them, and the reason a few drinkers have always salted a bitter beer without being able to say why it worked.
  4. Before you read on. How much does one can of Sierra Nevada Pale Ale cost as a single in a United States supermarket in 2026?
    Answer: 3dollars. It is a national brand sold in most grocery stores, not a limited release. A six pack of it is usually in the low teens.
    Around three dollars, give or take, depending on the state and the shop. The point of the number is that the entire set of experiments in this class costs less than one round of drinks in a bar. Learning to taste is not gated behind expensive beer, and beers that cost four times as much teach no more.
  5. Put the nose pinching experiment in the right order.
    Answer: 1. Pinch your nose shut and keep it shut 2. Take a mouthful and move it around 3. Swallow, still pinching 4. Let go and breathe out through your nose
    The release has to come after the swallow, with beer still coating your mouth. Let go too early and the two conditions blur together, and the whole effect is the contrast between them. People usually release at the same moment they swallow, which is exactly one second too soon.
  6. Why split the beer into two glasses for the salt experiment instead of salting the whole thing?
    Answer: You need something unsalted to compare against · You can go back and forth between them several times
    The comparison is the experiment. One glass on its own tells you the beer tastes bitter, which you knew. Two glasses tell you the difference the salt made, and going back and forth catches an effect too small to remember across a gap. Salt is not concentration dependent in the way the third option suggests.
  7. You are checking whether an unfiltered beer has been standing long enough for the yeast to drop. Click where you look.
    Answer: The bottom of the glass
    The bottom, where sediment collects. Worth knowing for these experiments, because if you are comparing two pours from the same bottle you want the same amount of sediment in each. Sediment on its own is not a fault and in several styles it is the point.
  8. Why write three words down rather than just remembering them?
    Answer: Written notes let you compare against a past you who had not read the label yet
    Because memory for flavour is poor and easily rewritten by whatever you learn afterwards. A note from two months ago is evidence. A memory from two months ago has quietly absorbed everything you have read since. Nothing about writing sharpens your nose.
  9. Expensive beer teaches you more about tasting than cheap beer does.
    Answer: False
    False, and the opposite is closer to true early on. A difference you can find between two ordinary lagers is a difference you genuinely learned to detect. An expensive beer arrives with a story, a price and a label full of suggestions, all of which will do your perceiving for you.
  10. How many of these experiments should you run in one evening?
    Answer: One
    One. Your nose stops reporting a smell it has had for a while, bitterness does not clear instantly between drinks, and alcohol is cumulative. Doing three in a row feels efficient and produces three results measured on three different versions of you, which is worse than one clean result.

F3.3.2 Three experiments that need two beers

Two glasses next to each other, one difference between them. This is the layout that teaches fastest.

Telling two similar things apart is a different skill from describing one thing, and it is the skill that transfers. The way to build it is to put the two things next to each other, taste one, taste the other, then go back to the first. Not one on Tuesday and one on Friday.

Worked example: Experiment 4. Two kinds of hoppy

Buy: Sierra Nevada Pale Ale, which is 5.6% and 38 IBU, and Sierra Nevada Hazy Little Thing, which is 6.7% and 35 IBU. Same brewery, near identical bitterness numbers, opposite experiences. Cost: about six dollars for two singles.

  1. Pour a small measure of each, side by side.
  2. Smell both before drinking either. Note which one is louder in the glass.
  3. Taste the Pale Ale. Count the seconds until your mouth feels normal.
  4. Rinse with water, wait a minute, then taste the Hazy and count again.
  5. Go back to the Pale Ale once more.

The Hazy smells much louder and of tropical fruit, then finishes soft and short. The Pale Ale smells of pine and grapefruit, less loudly, and leaves a firm dry bitterness that lasts several seconds longer. Their bitterness numbers differ by three units. Everything you just noticed came from when the hops went in, not how many.

Worked example: Experiment 5. Two pale lagers

Buy: a can of Budweiser at 5%, and a can of Pilsner Urquell, which is 4.4% in the United States. Cost: about five dollars. Buy Pilsner Urquell in a can rather than the green bottle, because green glass lets light through and light damages beer.

  1. Pour both. They will look almost the same, which is the point.
  2. Smell both. The Urquell has a herbal, slightly spicy smell from Saaz hops. The Budweiser is much quieter and faintly grainy.
  3. Taste the Budweiser first, then the Urquell.
  4. Notice the finish. One stops almost immediately. One has a soft bitterness that carries on.

This is the hardest and most useful of the six, because the two beers are genuinely close and a month ago you would have called both of them lager. Any difference you can find here is a difference you actually detected, with no label doing the work. If you cannot find one on the first try, that is a normal first result.

Green bottles and what light does to beer. Light damage is one of the ten faults, it happens fast, and cans prevent it completely.

Worked example: Experiment 6. A ruler for bitterness

Buy: a small bottle of tonic water, any brand, and any pale lager you like. Cost: about four dollars for both.

  1. Taste the tonic water on its own. That bitterness is quinine, and United States rules cap it at 83 parts per million.
  2. Notice that it is bitter and sweet at the same time, and that the sweetness is hiding some of the bitter.
  3. Now taste the lager, and place its bitterness against the tonic.
  4. Come back to this whenever you need to calibrate. Tonic water tastes the same every time, which beer does not.

Most people have no fixed reference for how bitter bitter is, so their ratings drift. Tonic gives you a constant to measure against, and it also demonstrates masking directly: the same drink without sugar would be close to undrinkable, which is why nobody drinks quinine straight.

Blind tasting is not a party trick

Covering the labels sounds like showing off. It is the opposite: it is the only way to find out what you personally detected rather than what you were told to expect.

The 2001 study where wine students described dyed white wine in red wine words is the cleanest demonstration. The dye was tasteless. It changed the words anyway, and the students had no idea. Expectation is not a weakness some people have. It is how perception works in everybody.

The cheap version: get someone to pour the two glasses in the kitchen and hand them to you without saying which is which. That is the whole method.

Before you read the next class

Run experiment 4 or 5 this week. Then notice something: whichever beer you tasted second, did it seem quieter than the first one. That question is what the next class is about.

    Answer: 83parts per million. It is low enough that tonic is a soft drink rather than a medicine, and high enough that you can clearly taste it. Quinine was originally a malaria treatment.
    83 parts per million, set in 21 CFR 172.575, and the label has to declare it. The number matters less than what it buys you: a bitterness that is identical in every bottle, every time, which makes tonic water a free and reliable ruler for a sensation that otherwise drifts.
  4. Comparing two beers that are very similar teaches you more than comparing two that are obviously different.
    Answer: True
    True. Two obviously different beers confirm you can tell a stout from a lager, which you could already. Two pale lagers force you to find a real difference with nothing else to go on. That is the skill that transfers to a menu where every beer is described in the same four words.
  5. Why buy Pilsner Urquell in a can rather than the green bottle?

    The Urquell is the one with a hop character you can actually smell and a finish that lasts. Both are pale lagers and both look the same in the glass. That is why this experiment improves your palate the most, and why it is the one most likely to produce no result on the first attempt.
  7. What is the cheapest way to run a blind tasting at home? Finish the sentence: get someone else to ______.
    Answer: pour the glasses
    Get someone else to pour and hand them over without saying which is which. No equipment, no bags, no numbered glasses. The entire value of blind tasting is removing the label, and a second person in the kitchen removes it completely.
  8. Roughly what does the whole set of six experiments cost?
    Answer: About twenty five dollars, spread over six sittings
    Around twenty five dollars in total, which is less than one round in most bars. Three of the six need a single ordinary beer, two need a pair of supermarket beers, and one needs tonic water. Nothing here is a specialist purchase and nothing needs a bottle shop.

    Each one isolates a single variable, which is what makes them worth doing at all. The salt experiment is the one people underrate. It shows that what you taste depends on what else is in your mouth, which is why bar snacks and the previous beer both matter.

Retraining what you notice

Your palate is not a fixed instrument. It drifts across an evening, it drifts across a year, and both kinds of drift are worth knowing about before you decide you dislike something.

By the end of this class you will be able to

  1. Say why the third beer reads differently from the first, and what to do about it
  2. Separate "this beer is wrong" from "my mouth is worn out"
  3. Treat a dislike as a current reading rather than a permanent fact

F3.4.1 Why the third beer is not the first beer

Three separate things wear down across a session, and only one of them is the alcohol.

People call it palate fatigue and picture worn out taste buds. Taste buds are not what is wearing out. Three different things are happening, they run on different clocks, and they need different fixes.

One: your nose stops reporting

Smell a thing continuously and you stop noticing it. This is not attention wandering. Calcium builds up inside the smell receptors and damps their own response, so the signal genuinely gets smaller. It is the same mechanism that makes you stop smelling your own house.

It is fast, it is specific to the smell you have been sitting with, and it recovers on its own once the smell goes away. Since most of flavour is smell, this is the biggest single reason a beer gets less interesting as you drink it.

Two: bitterness does not clear

Swallow a mouthful of a bitter beer and time how long the bitterness stays. It is usually somewhere between five and twenty seconds, and it does not stop cleanly. It fades.

That matters because the next mouthful lands on a mouth that has not finished with the last one. Trained sensory panels rinse with water and leave a gap between samples specifically to stop bitterness carrying over from one sample into the next. A person on a bar stool does neither.

How much it accumulates over a whole evening is less well measured than the confident advice online suggests. Guinard, Pangborn and Lewis went after exactly this question in 1986, timing bitterness in beer under repeated drinking. The safe conclusion is the carry over, not a number.

Three: the alcohol is in the room

Ethanol tastes slightly sweet and slightly bitter, and it burns. There is more of it in your mouth on the third beer than the first, and it is landing on a mouth that is already worn. Separately, and more importantly, drinking affects judgement in general. That is not a beer fact, and it applies here anyway.

Coffee beans do not reset your nose

The jar of coffee beans on a perfume counter is a piece of theatre that spread everywhere. Somebody tested it. Grosofsky, Haupert and Versteeg had people sniff coffee beans, lemon slices or plain air between fragrances, and the coffee beans performed no better than the other two.

The thing coffee does have is a strong smell of its own, which is the opposite of what you want between samples.

The order point deserves its own line, because it is the one you can act on before you have drunk anything. Light before dark, quiet before loud, low alcohol before high, and bitter last. A flight arranged the other way round wastes half of itself.

So is it the beer, or is it me

Ask three questions in this order. Is this the third beer or the first. Did the last thing I ate or drank have a strong flavour. And has the beer changed, or have I stopped noticing it.

If none of those explain it, then the question becomes whether the beer is actually faulty, and that is a large subject with its own module. Faults have specific smells, specific causes and specific names, and guessing at them is worse than not guessing.

One thing that is not fatigue

A heavily hopped beer can leave your mouth feeling rough and stripped rather than simply bitter. That drying feeling is astringency, it builds as you drink, and it is a texture rather than a taste. If your mouth feels like it has been sanded, that is what happened, and water helps more than waiting does.

    Answer: Mostly the nose, whose receptors damp their own response to a constant smell
    Mostly the nose. Smell receptors reduce their own output when a smell stays constant, and since most of flavour is smell, that is the biggest effect. Worn out taste buds is the folk explanation and it is the wrong organ. Taste buds are not being damaged by a pint of lager.
  2. Sniffing coffee beans between beers resets your sense of smell.
    Answer: False
    False, and it has been tested rather than merely doubted. Grosofsky, Haupert and Versteeg compared coffee beans against lemon slices and plain air, and the beans did no better than either. Coffee has a powerful smell of its own, which is the last thing you want in a nose you are trying to clear.
  3. Put four beers in the order that wastes the least of them.
    Answer: 1. A pale lager at 4.5% 2. A wheat beer at 5.2% 3. An IPA at 6.8% 4. An imperial stout at 11%
    Quiet before loud, weak before strong, bitter late. Anything after the imperial stout tastes of very little, and the pale lager suffers most because it has the least to defend itself with. This is the one palate problem you can solve entirely by deciding the order before you order.
  4. Before you read on. Swallow a mouthful of a bitter IPA. How long does the bitterness usually last?
    Answer: 12seconds. Long enough that you notice it is still there, short enough that you would not call it a minute. Time it on the next one you drink.
    Usually somewhere between five and twenty seconds, and it fades rather than stopping. That fade is why the second mouthful lands on a mouth that has not finished with the first, and it is why sensory panels rinse and wait between samples instead of drinking straight through.
  5. Sort these into what genuinely helps between beers and what does not.

    Water and time do the work, because bitterness needs rinsing and the nose recovers once the smell goes away. Coffee beans were tested and failed. A strong snack is the trap: it feels like clearing the mouth and it just replaces one lingering flavour with another, and if it is salty it will suppress bitterness too.
  6. Three beers in, a beer seems flat and boring. Which of these are worth checking before blaming the beer?
    Answer: Whether this is the first beer of the night or the third · What you ate or drank in the last ten minutes · Whether you have simply stopped noticing a smell you have sat with for an hour
    The first three, in that order. Position in the session, recent strong flavours and simple adaptation explain most disappointing beers. Glass shape has real effects and is a separate subject, and it is far down the list compared with a nose that stopped reporting forty minutes ago.
  7. One word for the drying, stripped feeling a heavily hopped beer can leave, which is a texture rather than a taste.
    Answer: astringency
    Astringency, or simply drying. It builds across a session, it feels like strong tea or a dry teabag, and it is different from bitterness even though the two arrive together. Water helps with it more than waiting does, because it is something coating your mouth rather than a signal being damped.
  8. Why do sensory panels rinse with water and leave a gap between samples?
    Answer: Because bitterness carries over from one sample into the next
    Carry over. Bitterness fades rather than stopping, so without a rinse and a pause each sample is measured on a mouth still holding the last one. Hydration is a real reason to drink water and not the reason for the protocol, and mouth temperature is not what is being controlled here.
  9. A disappointing beer is more often explained by where you are in the session than by a fault.
    Answer: True
    True. Session position, a strong snack, adaptation and temperature account for far more dull beers than faults do. Faults are real and worth knowing, and they have specific smells and specific names rather than a general wrongness. That is a whole module, and guessing at it is worse than not guessing.
  10. You have been sitting with the same IPA for forty minutes and it smells of much less than it did. What happened?
    Answer: Your smell receptors damped their response to a smell that stayed constant
    Adaptation, in your nose rather than in the glass. Some aroma does leave over forty minutes, which is why the second option is tempting. The effect on you is much larger, and it reverses as soon as you walk away for a minute. Warming increases aroma rather than suppressing it.

F3.4.2 Preferences move, and that is the useful part

The honest version of what a palate is, and what disliking something now does and does not predict.

Two things get confused constantly. How much of a flavour you detect, and how much you like it. They are separate, they move independently, and only one of them changes much.

Sensitivity varies between people, and it barely moves

People differ in how strongly they experience bitterness. The standard test uses a bitter chemical called PROP on a paper strip. Roughly a quarter of people taste almost nothing, about half taste it moderately, and about a quarter find it strongly unpleasant. That last group get called supertasters.

Be careful with that word. The genetics are only partly understood. A gene called TAS2R38 explains who can detect the chemical, and it does not explain the rest. No clear advantage to being in the sensitive group has ever been established. Sensitivity is not skill. A person who gets a louder bitterness signal is not a better judge of beer, any more than someone with sharp hearing is a better music critic.

You either have a palate or you do not

Wrong on both halves. The part that is fixed, how much signal your receptors send, is not the part that matters much. The part that matters, whether you can tell two similar beers apart and describe what you found, is a practised skill and it improves with side by side comparisons.

And the liking moves too, which is the next section. Somebody who found every bitter beer unpleasant two years ago and now drinks IPA did not grow new taste buds.

Liking moves with exposure

Repeated exposure to a bitter thing does two measurable things: it lowers how bitter the thing seems, and it raises how much people like it.

Small studies on specific foods. The pattern is consistent and the numbers are not a promise.

The number worth remembering from those is 14. It took roughly a dozen encounters, not two, and not fifty. So the honest advice about a beer you did not enjoy is not "keep at it until you like it". It is "you have had it once, and once is not a verdict".

What that does not mean

It does not mean drinking more. Twelve encounters spread across a year is twelve encounters. A small pour, next to food, once every few weeks, is the version of this that is worth doing.

It also does not mean you owe anyone an acquired taste. Some people find bitter drinks genuinely unpleasant and always will. That is a real difference between people, not a gap in your education, and there are more good beers that are not bitter than anyone can drink in a lifetime.

How to notice your own drift

You will not feel your preferences changing, because each individual beer feels like a straightforward reaction to the beer. The only reliable way to see it is to have written something down.

  1. Three words per beer, in your phone, at the time.
  2. Include how much you liked it, out of five. One number.
  3. Reread the list every few months rather than every week.
  4. When you find a note you disagree with, that is the drift. Go and buy that beer again.

This is also the cheapest possible protection against a much more common problem: buying the same style forty times because you liked it once, and never finding out what else you would have liked.

Worth remembering

Once is not a verdict.

One tasting tells you about one evening, one temperature, one position in a session and one mood. The research on bitter foods points at roughly a dozen encounters before liking settles. Keep the note, try it again in a month, and let the second reading argue with the first.

What this module was for

Every style module from here on asks you to notice something specific: a field mark, a texture, a difference between two beers that arrive in the same colour. All of that assumes the drill, the vocabulary and the honesty about your own drift.

None of it assumes a good palate. It assumes a repeatable method, which is a different and much more available thing.

  1. Before you read on. In the studies on bitter foods, roughly how many separate encounters did it take before liking measurably went up?
    Answer: 14encounters. It is more than a couple and it is not a lifetime. Think about how long it took you to start enjoying coffee, if you do.

The third option is the tempting overcorrection, and it confuses "give something a few chances" with "drink more of a thing you dislike", which is a worse idea for obvious reasons.

    One of the four is fixed, and it is the least useful one. Discrimination and description are practised skills, and liking moves with repeated exposure. People give up on beer because they assume the whole thing is the first row, which is the single most discouraging wrong belief in this subject.
  6. Which of these are honest reasons to keep trying a style you did not enjoy?
    Answer: Liking bitter things measurably increases with repeated exposure · Your first encounter carried a temperature, a mood and a session position with it
    The first two. Exposure genuinely shifts liking, and a single tasting is contaminated by everything around it. The last two are the versions of this argument used to make people feel bad, and they are both false. Some people never enjoy bitter drinks, and that is a difference rather than a deficiency.
  7. Write the four word line for what a single tasting tells you.
    Answer: once is not a verdict
    Once is not a verdict. It is the line that keeps you from writing off a third of what is available on the strength of one warm glass at the end of one evening. The research points at roughly a dozen encounters before liking settles anywhere.

    Because memory for flavour gets quietly rewritten by everything you learn afterwards, and a note does not. Finding a two month old note you now disagree with is the only clean evidence that your preferences moved. Writing does nothing for your nose directly.
  9. Someone who finds tonic water genuinely unpleasant should expect to enjoy a bitter IPA once they have practised enough.
    Answer: False
    False. Exposure shifts liking on average and it does not override a strong sensitivity. Somebody at the sensitive end may never enjoy bitter drinks, and telling them to practise harder is unkind and unsupported. There is a large amount of very good beer that is not bitter.
