What an American Pale Ale is, and why

One page to come back to, then the two decisions that put grapefruit in a beer made of barley.

Field marks
Deep gold to light amber, usually clear, sometimes lightly hazy. A thick off white head that holds. You get the smell before the glass reaches your face: grapefruit peel, pine sap, sometimes cut grass or melon. Under that there is a faint toast note from the malt.
In the mouth
Medium bodied, lively with bubbles. Bitterness arrives in the middle of the sip and keeps going through the swallow. The finish is dry, and the grapefruit smell comes back up the back of your nose after it.
Confused with
American IPA, which is stronger and more bitter. American Amber Ale, which is darker and tastes of caramel. Blonde Ale, which has far less hop in it. English Best Bitter, which smells earthy and marmalade-like rather than of grapefruit.

An American Pale Ale is a normal strength beer carrying as much hop smell as it can hold without becoming an IPA. Everything else follows from that. The citrus smell, the dry ending and the short shelf life all come from the same choice.

The physical tell

Swallow, then count to ten. The bitterness is still there, low down and at the back of your tongue, and it has not turned harsh or scratchy. Then look at the glass. A good one leaves rings of foam down the inside as the level drops. Those two things together are the field marks.

Where it came from

The word pale is a survivor from eighteenth century England, where a pale ale was pale next to porter and brown ale. The American version is a modern rewrite of that English beer using American ingredients. Sierra Nevada Pale Ale was first brewed in Chico, California in 1980, and it is the reason the style exists in the form it does.

The ingredient that changed everything was a hop. Cascade was released to growers in 1972 by the United States Department of Agriculture breeding programme. It smells of grapefruit, which no English hop does. Sierra Nevada built its Pale Ale on it, and American brewers have been chasing that smell ever since.

For about twenty five years this was the beer people meant when they said craft beer. IPA took that job later. Pale Ale is the parent, not the junior version.

Sources disagree

How strong an American Pale Ale is, and how dark.

  • BJCP 2021, style 18B American Pale Ale. 4.5% to 6.2% ABV. 30-50 IBU. 5-10 SRM. Original gravity 1.045-1.060.
  • Brewers Association 2026, American-Style Pale Ale. 4.4% to 5.4% ABV. 30-50 IBU. 4-7 SRM. Original gravity 1.044-1.050.

They agree exactly on bitterness and disagree about everything else. The Brewers Association describes the tighter, older, paler version. The BJCP range is the one that matches the shelf, because Sierra Nevada Pale Ale is 5.6% and sits above the Brewers Association ceiling. Expect 5% to 5.6% and a colour closer to amber than to gold.

Temperature and glass

Serve it at 45F to 50F, which is 7C to 10C. Straight from a very cold fridge you lose most of the smell, and the smell is what you paid for. Give it five minutes in the glass. A shaker pint is what you will be handed. A tulip or a wine glass will show you more, because the narrow top collects the aroma.

What ABV, IBU and SRM mean. ABV is strength. IBU is a lab measure of bitterness, and a rough guide to how bitter a beer tastes. SRM is colour only.

    Answer: 38IBU. A mass market American lager sits around 10 IBU. A Munich Helles is about 18. A big American IPA runs 60 to 70.
    It is 38 IBU, and the style band is 30 to 50. Most people guess much higher, because the beer smells so strongly of hops that the bitterness feels bigger than it measures. Smell and bitterness are two different things, and this style is the clearest place to learn that.
  2. Which of these are reliable signs that the beer in front of you is an American Pale Ale?
    Answer: Grapefruit or pine smell that reaches you before the glass does · Rings of foam left down the inside of the glass as the level drops
    The citrus smell and the clinging foam are the two field marks, and both survive a noisy bar. No smell at all points to a pale lager or a very old Pale Ale. A sweet sticky finish points to an Amber Ale or a beer with too much caramel malt, because a Pale Ale is meant to finish dry.
  3. Why does an American Pale Ale smell of grapefruit when an English pale ale does not?
    Answer: American hop varieties such as Cascade carry citrus oils that English hops do not
    It is the hop. Cascade was released to growers in 1972 and it smells of grapefruit on its own. The fruit peel answer is tempting because some modern beers really do add fruit, and a few even say so on the label. Yeast can make fruity flavours, but they read as banana, pear or apple rather than citrus.
  4. Click the band on the colour scale where an American Pale Ale sits.
    Answer: 5 to 8 SRM, deep gold to light amber
    A Pale Ale is 5 to 10 SRM, so deep gold at its lightest and light amber at its darkest. People reach for the pale straw band because the word pale is in the name. That word is doing historical work, not visual work, and this is where most misreadings of the style start.
  5. Name the hop variety that Sierra Nevada Pale Ale is built on.
    Answer: cascade
    Cascade, released to growers in 1972 and the source of the grapefruit smell. Centennial is tempting because it is a close American relative used in many similar beers. Saaz and Fuggle are the classic Czech and English hops, and neither smells anything like citrus.

3.1.1.2 Two decisions, and the dial to the IPA

A Pale Ale is not a different process from an IPA. It is the same process, set lower.

Decision one: put the hops in late

Hops boiled for a full hour give you bitterness and lose their smell. The heat converts their acids into a bitter, water friendly form, a change brewers call isomerization. It also boils the aromatic oils away. So a brewer who wants smell has to add hops at the end instead.

An American Pale Ale gets a small early addition for bitterness, then a much bigger one in the last fifteen minutes and after the heat goes off. Many brewers then add dry hops to the fermenter, where there is no heat at all. That late load is where the grapefruit comes from.

Decision two: keep the malt quiet

The grain bill is mostly pale malt with a small amount of caramel malt for colour and a little body. Not enough to taste of toffee. The job of the malt here is to hold the hops up, not to say anything of its own. Add much more caramel malt and you have made an American Amber Ale.

The dial

This is the part worth carrying out of the room. An American IPA is not made differently. It is made the same way with the settings raised. The BJCP itself says that many modern American Pale Ales are simply lower gravity IPAs.

Worked example: Turn one dial and you get a different beer

Start with a finished American Pale Ale at 5.2% and 38 IBU. Change one thing at a time.

  1. Raise the strength to 6.8% and the bitterness to 60 IBU, and double the late hops. That is an American IPA.
  2. Leave the hops alone and add a good deal more caramel malt. That is an American Amber Ale.
  3. Leave the malt alone and cut the late hops to almost nothing. That is a Blonde Ale.
  4. Swap the American hops for English ones and drop the carbonation. That is an English Best Bitter.

Pale Ale sits in the middle of the hop forward family. Every neighbour is one setting away, which is why the menu descriptions all sound the same and the glasses do not.

Why the beer goes off so fast

Hop oils are volatile, which means they leave. Light and warmth speed that up. A Pale Ale three months past its date still has the bitterness but has lost the smell, and the smell was the point. This is the style where the date on the can matters most, and Class 3 comes back to it.

What the boil actually does. Boiling the sugary liquid called wort sterilises it, sets the bitterness, and drives off compounds you do not want. When the hops go in decides what they give you.

    Timing, not temperature and not quantity. Oils evaporate during a long boil, so late hops keep their smell while early hops only give bitterness. Warm fermentation is real and does make fruity flavours, but they read as pear or banana. Total quantity mostly moves the bitterness, which is why a 38 IBU beer can still smell enormous.

The whirlpool afterwards does the same job and is the tempting answer, because a modern brewery uses both and this beer was built before that was common. Start of boil is where most of the weight of hops goes for many beers, but an hour of boiling destroys the aroma. Nobody adds hops at packaging, because the beer would not have time to take anything from them.
  3. Sort what an American Pale Ale brewer is aiming for and what they are deliberately keeping out.

    The wanted list is all about carrying hop smell on a light frame. Caramel belongs to the Amber Ale next door, roast belongs to porter and stout, and noticeable alcohol warmth means you have walked into IPA territory. Beginners often expect a hoppy beer to also be strong, and this style exists precisely to show that it does not have to be.
  4. An American IPA is brewed by a different process from an American Pale Ale.
    Answer: False
    False. It is the same process with the settings raised: more malt, more hops, more alcohol, more bitterness. The BJCP goes as far as saying many modern Pale Ales are just lower gravity IPAs. Thinking of them as separate crafts is tempting because the menu treats them as separate worlds, and it makes both harder to understand.
  5. Put the four stages of making an American Pale Ale into the order the brewer does them.
    Answer: 1. Mash the pale and caramel malt to make a sweet liquid called wort 2. Boil the wort, with a small hop addition early for bitterness 3. Add the large hop charge in the last fifteen minutes and after the heat goes off 4. Ferment warm with ale yeast, then dry hop in the fermenter
    Mash, boil, late hops, ferment and dry hop. The order matters because the two hop additions do completely different jobs. The early one sets bitterness and is gone by the time you drink it. The late ones and the dry hop are the entire smell of the beer, and they are the first thing to fade with age.

What it is not, and whether you will like it

Four beers sit next to this one on every American menu. Here is how to tell them apart, and how to decide before you order.

3.1.2.1 The four neighbours

Two questions asked of the glass will separate a Pale Ale from all of them.

Everything in this family smells of hops, so smell alone will not sort them. What sorts them is how strong the beer is, how dark it is, and whether the malt says anything. Each neighbour below has one feature you can catch without a lab.

  • American IPA. Stronger and clearly more bitter, and you can feel the alcohol as a slight warmth. If the beer is fighting you, it is an IPA.
  • American Amber Ale. Visibly darker, and the first thing you taste is caramel rather than hops. The hops are still there, they just arrive second.
  • Blonde Ale. Paler, softer, and the hop smell is faint or missing. It is the beer you order when you do not want to be challenged.
  • English Best Bitter. Weaker, less fizzy, and the hops smell earthy or of marmalade rather than of grapefruit. Often served cool rather than cold.

Two questions, asked silently

You do not need the table at the bar. You need two questions.

  • Can I feel the alcohol as warmth. If yes, you are probably in IPA territory.
  • What arrives first, hops or caramel. If caramel, it is an Amber Ale.

Loud hop smell, no alcohol warmth, no caramel first, and a colour between gold and light amber puts you in Pale Ale territory.

    Each of these is one sensation you can catch in a noisy bar. The pair people mix up most is Pale Ale and IPA, because they smell the same at first. The difference is what happens after you swallow: an IPA keeps pushing, a Pale Ale lets go. Strength is the honest tell, not smell.
  2. You are handed an unlabelled amber beer at 5.5%. Caramel is the first thing you taste, and a modest grapefruit smell arrives second. What is it most likely to be?
    Answer: An American Amber Ale
    Caramel first is the Amber Ale signature, and the colour supports it. A Pale Ale is tempting because the strength fits perfectly and the hops are present, but in a Pale Ale the hops lead and the malt stays quiet. An IPA at 5.5% is possible but would be more bitter than this description suggests.
  3. Sort these tasting notes into the beer they belong to.

    These two are the pair people mix up most, because the smell is often identical. Everything on the Pale Ale side is about restraint and everything on the IPA side is about persistence. The warmth is the hardest signal to fake, because it comes from alcohol rather than from hops.
  4. A Blonde Ale and an American Pale Ale sit in roughly the same bitterness range.
    Answer: False
    False. A Blonde Ale runs 15 to 28 IBU and a Pale Ale runs 30 to 50, so the ranges barely touch. The two look similar in the glass and often sit next to each other on a taplist, which is what makes this tempting. Bitterness is the number that separates them, and the smell separates them further.
  5. Which of these would make you rule out American Pale Ale for the beer in your hand?
    Answer: A distinct alcohol warmth at the back of the throat · A dark reddish brown colour with a thick caramel flavour · A soft earthy hop smell with almost no fizz, served cool
    Alcohol warmth points to an IPA, caramel and a dark colour point to an Amber Ale, and soft earthy hops served cool point to an English Bitter. The grapefruit smell is exactly what a Pale Ale does, so it rules nothing out. Ruling out is faster than ruling in, and it is what experienced drinkers actually do.

3.1.2.2 Will you like it, and what to buy

Predicting your own reaction from food you already eat, then four cans you can find in an American shop this week.

Order one if you already like any of these

  • Grapefruit, marmalade or the white pith on a lemon. That is the hop smell, almost exactly.
  • Strong tea left to brew a minute too long. You have already decided that a clean bitterness is pleasant rather than a fault.
  • Rosemary, pine nuts, or the smell of a Christmas tree. Pine resin is a real hop note and some people love it more than the citrus.
  • Tonic water or a bitter aperitif. Bitterness as a flavour you seek out is the single best predictor here.

Leave it for now if either of these is true

  • You dislike grapefruit and you take sugar in your coffee. Bitterness plus citrus is the whole beer, and there is nothing else in it for you.
  • You want a drink that stays quiet next to a meal. This one talks over most food, and Class 3 explains which foods can answer it.

Buy the freshest one, and buy cans

This matters more here than in most styles. The hop smell is the beer, and it fades in months. Look for a packaged on date rather than a best before date, and take anything under three months old. Cans keep light out completely, which is why most American breweries moved to them.

    Answer: They will probably enjoy a fresh Pale Ale, because they already seek out bitterness and citrus
    What people say about beer is less reliable than what they choose to eat and drink. Tonic and marmalade are both bitter and citrus, which is this beer exactly. The second answer is tempting and polite, but the beer that put them off was probably stale or a much bigger IPA. Buy a fresh can and find out.
  3. Name the 1980 California pale ale that is the standard benchmark for this style and is sold nationwide.
    Answer: sierra nevada
    Sierra Nevada Pale Ale, 5.6% and 38 IBU, and it is in almost every supermarket in the country. All four names in the bank make good pale ales, which is what makes this worth checking. The other three are regional to varying degrees, and Sierra Nevada is the one you can count on finding anywhere.
  4. When choosing between two cans of the same Pale Ale, the date on the can matters more than the price.
    Answer: True
    True, and this is the style where it matters most. The hop smell you are paying for fades within months, and a six month old can has the bitterness without the aroma. A fresh cheap Pale Ale beats a stale expensive one every time. Look for a packaged on date, which more American breweries now print.
  5. Somebody describes what they want from a drink. Sort each statement by whether it points towards or away from a Pale Ale.

    The first three describe someone who wants a lot of flavour at normal strength, which is the entire brief for this style. The last two describe someone who should be pointed at a lager or a Blonde Ale. Neither preference is better, and being honest about which one you have saves you money and disappointment.

Ordering it, eating with it, judging it

What to ask, what to put next to it, how to spot a tired one, and the thing almost everybody gets wrong about the word pale.

3.1.3.1 At the bar and at the table

The pour size, the words, and four foods that work for reasons you can explain.

Ordering it

Take the full pour. A Pale Ale is a normal strength beer built to be drunk rather than sipped, and a taster glass loses most of the smell before it reaches you. In the United States that means a pint, though what you get is often fourteen or sixteen ounces.

The one question worth asking is about freshness. Bar staff will not be offended, because everyone in the trade knows hoppy beer fades. If the answer is vague and the taplist is long, pick something that moves.

  • A pale ale, please. Which one is freshest.
  • When did that keg go on. A perfectly normal question in a good bar.
  • What hops are in it. This tells you whether to expect grapefruit, pine, tropical fruit or something else.

If a bar keeps its pale ales in clear or green bottles under lights, order something else. Light damages hop flavour within minutes.

Food

What does not work: delicate white fish, mild soft cheese, and anything very hot with chilli. The first two disappear underneath the beer. Chilli heat and hop bitterness add together, so a hot curry with a Pale Ale gets hotter rather than calmer.

The three pairing mechanisms. Cut, match, or contrast. Most good pairings are one of the three, and matching intensity comes before matching flavour.

Check yourself

  1. You are in a bar with thirty taps and no dates on the board. You want a Pale Ale. What is the sensible move?
    Answer: Ask which pale ale is freshest, or when the keg went on
    Freshness decides this style, and staff answer that question honestly. The IBU answer is tempting and half right, because bitterness really does outlast aroma, but that is exactly the problem: a stale Pale Ale is bitter with nothing on top. Tasters lose the smell before they reach you, so they mislead here.
  2. Match each food to the reason a Pale Ale works alongside it.
    Answer: Cheeseburger with Bitterness cuts fat and resets the mouth · Fish tacos with lime with Citrus in the glass matches citrus on the plate · Sharp cheddar with Both are loud enough to survive each other · Fried chicken with Bubbles and bitterness scrub oil together
    Three mechanisms are working here: cutting fat, matching a flavour, and matching intensity. The cheddar case is the one people miss. Pairing fails more often from a mismatch of loudness than from a mismatch of flavour, and a Pale Ale is loud.
  3. A hoppy Pale Ale is a good choice with a very hot chilli dish.
    Answer: False
    False, and this is a popular mistake. Bitterness and capsaicin heat add together, so the burn increases rather than settles. What actually helps is sweetness, low bitterness and some body, which is why a Helles or a wheat beer works better. Order the Pale Ale before the curry, not with it.
  4. Which of these are worth doing when you order a Pale Ale in an unfamiliar bar?
    Answer: Ask when the keg went on · Ask what hops are in it · Avoid pale ales sitting in clear bottles under bright lights
    Freshness, hop variety and light exposure all change what lands in front of you. The temperature answer is the trap. Very cold beer hides aroma, and aroma is what you came for, so 45F to 50F is the target and a few minutes in the glass helps.
  5. What kind of date should you look for on a can of Pale Ale, rather than a best before date?
    Answer: packaged on
    A packaged on or canned on date tells you the age of the beer, which is the number that matters for hop aroma. Best before is tempting because it looks more helpful, but it only tells you a deadline chosen by the brewery, and different breweries choose very different windows.

3.1.3.2 Faults, the myth, and how to remember it

One problem does most of the damage in this style, and it is not a brewing fault at all.

What a good one does

The smell arrives before the glass does, and it is clean and bright rather than vague. The bitterness is firm but smooth, and it lets go a few seconds after you swallow. The malt is present as body rather than as flavour. The head holds and leaves rings down the glass.

The problem this style suffers from most

Age, and it is not the brewer's fault. Hop oils fade first, so an old Pale Ale keeps its bitterness and loses its point. Then oxygen gets to work and the beer starts to taste of wet cardboard, with a sweetish, papery edge behind it. Six months in a warm shop will do it.

Two real brewing faults show up here as well. The first is a slick butterscotch flavour called diacetyl, which comes from fermentation being rushed or cut short. The second is a dry, mouth scraping harshness called astringency, which feels like over brewed tea and comes from plant compounds called polyphenols pulled out of grain husks or very heavy dry hopping.

The difference is worth knowing. A stale beer is a shop problem, so buy fresher next time. A beer with butterscotch or a scraping finish is a brewery problem, and it is fair to say so.

Pale does not mean pale like a lager

The word pale was set in England in the seventeen hundreds, when new coke fired kilns let maltsters dry grain without smoking it. The result was pale next to porter and brown ale, which is what everybody else was drinking. It was never pale next to a Pilsner, because there were no Pilsners.

An American Pale Ale runs 5 to 10 SRM, which reads as deep gold to light amber. It is noticeably darker than a lager. If you order one expecting something pale and light, the beer will surprise you twice: once with its colour and once with its bitterness.

Worth remembering

And one line for the glass itself: an American IPA with the volume turned down and the hop character left in. If you can feel the alcohol, you have been handed the IPA.

    Smell first, because aroma is the first thing to disappear and the first thing that tells you the beer is fresh. The last step is the one that separates a Pale Ale from an IPA, and it is the step people skip. Running the checks in this order stops you deciding from the colour alone.
  5. Somebody says pale ale is a beginner beer, just a weak IPA with nothing going on. Which corrections are accurate?
    Answer: It came first. IPA as Americans know it grew out of this beer, not the other way round · It is the same process as an IPA with the settings lower, which is a design choice rather than a failure · It is often the harder beer to get right, because there is less alcohol and less malt to hide behind
    The first three are all true and worth saying. The fourth is the trap: a Pale Ale runs 30 to 50 IBU and an American IPA runs 40 to 70, so the IPA is more bitter. Defending a restrained beer by claiming it is secretly the loud one gets the answer wrong and misses what is good about it.

An IPA is a pale beer with far more hops in it than the beer needs. That single decision explains everything else you notice. The grapefruit smell, the sticky pine, the dry bitter ending, and the short shelf life all come from the same choice.

The name stopped meaning anything literal a long time ago. The official style guidelines never spell the letters out, and they explain why: none of these beers historically went to India, and many of them are not pale. A Black IPA is not pale. A Belgian IPA never went anywhere near India. What the letters signal now is simply that hops are the loudest thing in the glass.

What ABV, IBU and SRM mean. ABV is strength. IBU is a lab measure of bitterness, and a poor guide to how bitter a beer tastes. SRM is colour only.

    The design is simple: hops loud, malt quiet. Sweetness hides bitterness, so a brewer who wants the hops to lead keeps the malt restrained and the finish dry. Roasted grain has no place in a standard IPA at all. Yeast fruitiness is loud in a hazy IPA and quiet in a West Coast one.
  4. Which of these is NOT a beer that people commonly mistake for an IPA?
    Answer: Stout, which is dark and tastes of roasted coffee
    Nobody confuses an IPA with a stout, because they look and taste nothing alike. The real confusions are Pale Ale, which is softer and weaker, Double IPA, which is the same beer at 8% or more, and Hazy IPA, which is cloudy and much less bitter. Pilsner catches beginners out because it is also pale and hoppy, but it is crisp and bready where an IPA is citrusy and sticky.
  5. In one word: what part of an IPA arrives late, dries your mouth out, and stays with you after you swallow?
    Answer: bitterness
    The bitterness, in the finish. That dryness is the signature of the style, and it is what makes you want another sip. If you can notice it and name it, you are already tasting on purpose rather than just drinking.

3.2.1.2 Why this style and not another

One number explains why IPA is worth learning first. One piece of research explains something about ordering it that most beer writing leaves out.

Half the taps

IPA is the most important beer style in America by a wide margin. In 2024 it accounted for 49.4% of all craft beer sales by value in American shops, which was 2.28 billion dollars. That is nearly half of craft beer in one style.

The context matters as much as the number. It gained ground in a shrinking market. Craft beer volume fell 5.1% in 2025 while IPA picked up share. So IPA is not just dominant, it is getting more dominant while everything around it contracts.

What that means for you is simple. If you learn one style properly, learn this one. Walk into any American taproom and roughly half the board will be IPAs or IPA variations. Understanding this one style turns most of a menu from noise into information.

Worth knowing before you order one

In 2018 a sociologist surveyed 93 craft beer drinkers at four New York bars and asked what makes a beer masculine or feminine. People agreed with each other 83% to 88% of the time. That level of agreement means this is a shared script rather than one person's opinion. IPA was the beer most often named as masculine.

The judgement falls unevenly, and that is the part that matters. Every single person surveyed had an opinion about a woman ordering outside the script. A third of them would not comment on a man doing the same thing. Men who ordered outside it got excuses made for them, along the lines of he is at the beach or he is paying himself. Women got verdicts. Around a third of the male respondents said something sexual about a hypothetical woman drinking an IPA. Others said she must be masculine.

This is at the front of the module rather than buried at the back for a reason. It is why many people order the beer they can order comfortably instead of the beer they want. You are not imagining the temperature of the room. Module 4 has the practical part.

    The first three. Men got explanations offered on their behalf, such as he is at the beach or he is pacing himself, and a third of respondents declined to comment on men at all. Every respondent had something to say about a woman doing exactly the same thing. The unevenness is the finding, not the stereotype itself.
  5. You want one widely available beer to learn what a standard American IPA tastes like. Which is the most useful choice, and why?
    Answer: Bell's Two Hearted Ale, because it uses only one hop variety so every smell in the glass has one source
    Two Hearted Ale is made with a single hop called Centennial. With only one hop in the beer, every smell you notice is coming from the same place, so you can actually learn what it is. Most IPAs blend three or four hops, which is lovely to drink and useless for learning. Variety helps later. It does not help at the start.

3.2.2.1 The sequence, in order

Four stages. Once you notice them separately you cannot stop noticing them, and that is most of what learning to taste actually is.

Four steps, and the last one is the one everybody skips. Swallow, then count to ten and pay attention to what your mouth is doing. In an IPA, those ten seconds are where the style lives.

Why the bitterness turns up last

Sweetness and salt register on your tongue almost at once. Bitterness is slower. It takes longer to build and longer to clear. That is why the first sip of an IPA can seem mild and the fourth can seem fierce. Bitterness adds up across a glass in a way sweetness does not.

So judging an IPA on the first sip gets you the wrong answer in both directions. Give it three.

If it feels harsh rather than bitter

There is a real difference here and it has a name. Bitterness is a taste. Astringency is a texture, and it feels like sucking on a dry teabag. Class 6 covers why. For now, start noticing which one you are getting. Ask yourself whether your mouth is tasting something, or whether your mouth is drying out.

    Wait. Swallow, then count to ten and notice what your mouth is doing. In an IPA those ten seconds contain the drying bitter finish that defines the style. Most people swallow and immediately sip again, which throws away the most informative part of the whole experience.
  4. Your IPA does not taste bitter so much as it makes your mouth feel dry and rough, like strong tea. What are you noticing?
    Answer: Astringency, which is a texture rather than a taste
    Astringency. It comes from compounds in the hops binding to the proteins in your saliva and stripping the lubrication out of your mouth, so it is something you feel rather than something you taste. In heavily hopped hazy IPAs it has a name, hop burn, and above low levels the Brewers Association treats it as a fault.
  5. The smell of an IPA and the hop flavour in the middle of the sip come from the same hop addition.
    Answer: False
    False, usually. The smell comes almost entirely from hops added cold, days after brewing. The flavour in the middle of the sip comes mostly from hops added near the end of the boil. A brewer can set them independently, which is why some IPAs smell enormous and taste restrained, and others do the opposite.

3.2.2.2 Will you like it, and what to say

Predicting your own reaction from tastes you already have, then three sentences that make you sound like you are paying attention.

Order one if you already like any of these

  • Grapefruit, marmalade, or strong black tea. Almost exactly the same bitter citrus register.
  • Black coffee. You have already decided that bitterness can be a pleasure rather than a problem, which is the main hurdle.
  • Rosemary, pine nuts, or gin. Gin is a bitter drink built on botanicals, and the overlap with a piney IPA is real.
  • Sauvignon blanc. Start with a New Zealand hopped IPA. The hop called Nelson Sauvin is named after the wine and was chosen because it tastes like it.

Leave it for now if either of these is true

  • You find black coffee or grapefruit genuinely unpleasant. Sensitivity to bitterness varies between people and is partly genetic. That is a real difference, not a gap in your education, and it does not need fixing.
  • You want something to drink slowly over three hours. An IPA is 6% to 7% and the bitterness builds up.

Better first steps. A hazy IPA is softer, barely bitter, and fruit forward, which makes it the gentlest way into the family. Or a Pale Ale, which gives you the same flavours at about 60% of the volume and around 5% alcohol.

Say this out loud

Three honest sentences. All three are true of nearly every IPA, all three are things a professional taster would say, and none of them requires you to know a single hop variety.

  • It smells like grapefruit and pine.
  • It is bitter at the end more than the start.
  • It dries my mouth out, in a good way.

And a fourth sentence, which is the most useful of the lot. I do not think this one is for me. That is a complete and unarguable position. You do not owe anyone a justification for it.

On describing beer at all

The standard vocabulary of beer writing is worth being a little suspicious of. One veteran beer writer has argued that it leaves out flavours that are unfamiliar to white Western readers. If your reference for a smell is a fruit or a spice that is not on the usual list, the usual list is the thing that is wrong, not your nose.

The most read thing that writer has ever published is a post called Words to describe the beer you are tasting. The demand for basic vocabulary is enormous, which tells you how many people feel shut out by it. Use whatever words are true for you.

  1. A friend loves black coffee and grapefruit but has never had an IPA. What do you predict?
    Answer: They will probably like it, because those are the same bitter citrus flavours
    Tolerance for bitter citrus flavours transfers directly. Somebody who enjoys black coffee has already accepted that bitterness can be a pleasure, which is the main obstacle. Grapefruit and marmalade fans are an even better bet, because that is precisely the smell of American hops.
  2. Someone tells you an IPA is unpleasantly bitter to them. What is the accurate response?
    Answer: Sensitivity to bitterness varies between people and is partly genetic, so that is a real difference rather than a shortcoming
    How strongly people taste bitter compounds genuinely varies, and it has a partly genetic basis. It is not a sophistication gap and it does not need correcting. The useful move is to redirect rather than lecture. A hazy IPA or a Pale Ale gives them the same smells at a fraction of the bitterness.
  3. Which of these would you suggest to someone put off by bitterness?
    Answer: Hazy IPA · Pale Ale
    Hazy IPA is the gentlest way in, and the official guidelines actually set its bitterness range lower than a standard American IPA. Pale Ale gives the same flavours at lower intensity and lower strength. West Coast IPA is the most bitter of the family despite being the palest, and a Double IPA is more of everything. Both of those are the wrong direction.
  4. Which hop was named after a wine grape, and chosen because it tastes like it?
    Answer: nelson sauvin
    Nelson Sauvin, from New Zealand. Named after the Nelson region and after sauvignon blanc, which it genuinely resembles: white wine, gooseberry, green grape. It is the obvious bridge for a wine drinker, and a good answer to somebody who says they do not really like beer.
  5. What is the most useful sentence you can say about a beer you do not like?
    Answer: I do not think this one is for me
    It is complete, it is adult, and it needs no vocabulary to defend. Every published guide on this agrees, and one of them lists being afraid to say you do not like something as one of the nine mistakes everyone makes. No etiquette guide anywhere treats an unfinished glass as a problem.

What makes an IPA an IPA

One decision separates an IPA from every other pale beer. It is not how many hops go in. It is when.

3.2.3.1 When the hops go in

The single most useful fact in this module.

Hops can go into a beer at up to four different moments, and the moment you choose decides what you get out of them. Early and hot gives you bitterness. Late and cold gives you smell. You cannot get much of both from the same addition.

Hot for bitter, cold for smell.

That is the whole rule. Heat makes bitterness and destroys smell. Cold preserves smell and makes no bitterness. Every hop decision in modern brewing comes out of that trade.

Why it works that way

Two things are racing each other. The bitterness reaction needs sustained heat, and it is slow. A standard 60 minute boil only converts about a fifth to a third of what is available, and it stops improving after about an hour.

The aromatic oils, meanwhile, are leaving with the steam. The main one is called myrcene, and its concentration halves roughly every five minutes of boiling. After an hour there is essentially none left. So a 60 minute addition gives you maximum bitterness and no smell, and a cold addition does the exact opposite.

Worked example: Reading a label you have never seen

Cryo Fog. DDH Hazy IPA. 7.2%. 45 IBU. Citra and Mosaic. Canned 07/28.

  1. DDH means double dry hopped, so a very large cold hop addition. Expect the smell to be enormous and the bitterness to be modest. Those two are not linked.
  2. Hazy tells you the brewer aimed for low bitterness and a soft texture, with fruity yeast. That agrees with the reading above.
  3. 45 IBU sounds middling, and in a hazy it will taste lower than that, because sweetness and the hop material itself both push perceived bitterness down.
  4. At 7.2%, a 16 ounce pour is about 1.9 standard drinks, not one. Two of these is nearly four normal beers.
  5. Citra and Mosaic are the two most common modern aroma hops. Citra gives grapefruit, peach and lime. Mosaic gives blueberry, tangerine and papaya. So expect tropical fruit rather than pine.
  6. Canned on 28 July means it is two weeks old. For a hazy that is excellent. Past 30 days I would pick something else.

It will smell like tropical fruit juice, taste soft and only mildly bitter, drink dangerously easily for its strength, and be in good condition.

    Boil, flameout, whirlpool, dry hop. As you move down that list, bitterness falls and smell rises. A brewer choosing where to put a hop is choosing a point on that trade off, and nothing else.
  4. Myrcene is the main aromatic compound in hops. Guess how many minutes of boiling it takes for its concentration to halve.
    Answer: 5 min. A standard bittering addition boils for 60 minutes
    About five minutes. Which means that after a 60 minute boil you have halved it roughly twelve times over, and there is essentially nothing left. That one number is the entire reason dry hopping exists.
  5. A brewer wants a beer with a huge tropical smell but only gentle bitterness. Sort these decisions.

    Everything cold or cool helps. Everything hot and early works against. A whirlpool at 170F sits below the temperature where the bitterness reaction runs, so it pulls out the oils without adding bitterness. That trick is what made the modern hazy IPA possible.

3.2.3.2 Where the fruit flavour comes from

Chemistry working at four parts per trillion, and the reason a beer can smell of passionfruit without containing any.

Hazy IPAs use particular strains of yeast, and the two famous ones are called Conan and London Ale III. Both are poor at what brewers call flocculation, which just means how well the yeast clumps together and drops to the bottom when it has finished working. These strains do it badly, so more of the yeast stays floating, and that is one of the things keeping the beer cloudy.

Conan arrived at a brewpub in Vermont in 1988 and got its nickname from how aggressively it works. It throws off strong flavours of peach, apricot, citrus and pineapple, all of which come from the yeast rather than from anything added.

The genuinely surprising part

Hops arrive carrying aroma compounds that are chemically locked up and completely odourless. These are called thiols, and the locked up pool is between one hundred and one thousand times larger than the part you can actually smell. For most of brewing history all of it went to waste.

Some yeasts carry an enzyme that cuts those compounds free. Brewers call the whole process biotransformation, which is a long word for the yeast chemically changing what the hops brought in. Then the yeast does something better still. It converts one of the freed compounds into another one that your nose is far more sensitive to.

ng/L means nanograms per litre. These compounds make up less than 1% of the aromatic oils in hops and do more work than almost anything else in the glass.

So the yeast takes something you can smell at 55 nanograms per litre and turns it into something you can smell at 4. That is roughly fourteen times more powerful, from the same raw material.

A sense of scale

Four nanograms per litre is about four drops spread through 250 Olympic swimming pools. Your nose does that without being asked. Beer aroma works at concentrations most laboratory instruments struggle to measure.

Why this was not always possible

The enzyme that cuts the compounds free is made by a gene called IRC7, and most brewing yeasts carry a mutation that switches it off. That is why the enormous locked up pool sat unused for centuries. Brewers now select strains where it works, and some add a powder made from New Zealand grape skins that supplies more of the locked up compounds for the yeast to release.

The one number that separates hazy from standard

Hazy IPA is specified at 25 to 60 IBU. American IPA is specified at 40 to 70. The official guidelines have written the lower bitterness into the definition, so it is not only a matter of perception. If somebody says hazy IPAs are IPAs for people who do not like IPAs, they are being unkind, but they are also describing the specification.

    The first three. The two American bodies disagree about whether it is a separate style at all. The 1990s version and the modern version are meaningfully different beers. And at SRM 2 to 6 it is the palest of the family while running 50 to 75 IBU. Style definitions are ongoing arguments, not settled facts.

    Bell's Two Hearted Ale, made with a single hop called Centennial. Single hop beers are genuinely useful for learning because every smell in the glass has exactly one source. Most IPAs blend three or four, which is nice to drink and no help at all when you are trying to learn.

Why a Double IPA comes in a smaller glass

It is not meanness. A 16 ounce pour of an 8% Double IPA is 2.1 standard drinks, so two of them is over four. Most bars cap it at 10 or 12 ounces as a matter of course. The smaller glass is a decision about alcohol, not a short measure.

Is Rye IPA a real style?

  • BJCP 2021. Lists it under a category called Specialty IPA, and says outright that this category is not a style. It is an entry class for competitions.
  • Brewers Association 2026. Does not define Rye IPA at all.

Both people in this argument are right, about different documents. Style guidelines are written by different organisations for different purposes, and they disagree regularly. This is normal and not worth arguing about.

    Most of the family are malt variations on the same hop idea. Belgian IPA changes the yeast, which is why it tastes so different, since the pepper and clove come from the yeast. Brut IPA changes the process by adding an enzyme that eats every fermentable sugar.
  3. How many standard drinks are in a 16 ounce pour of an 8% Double IPA?
    Answer: 2.1 drinks. A standard drink is a 12 ounce beer at 5%, and the sum is ounces times strength divided by 0.6
    About 2.1. Sixteen times eight, divided by 0.6, gives 213, so 2.1 drinks. This is the biggest miscalculation for anyone whose idea of a beer is a 5% lager. Two pints of a Double IPA is over four standard drinks, and it is exactly why bars serve it in 10 ounce glasses.
  4. What causes a Brut IPA to end up drier than any other beer?
    Answer: An added enzyme breaks down sugars the yeast normally cannot touch
    An enzyme is added that breaks down the long chain sugars yeast usually leaves behind. With every sugar consumed, the finished liquid ends up less dense than water. The result is bone dry and champagne like, which is where the name comes from.
  5. One person says Rye IPA is not a real style. Another says it is. Who is right?
    Answer: Both, about different documents. The BJCP lists it and the Brewers Association does not
    They are describing different rulebooks. The BJCP lists Rye IPA under a category it explicitly says is not a style, and the Brewers Association does not have it at all. Style guidelines are written by separate organisations for separate purposes, and disagreement between them is routine.

Why the next class looks the way it does

Learning to tell similar things apart works best when you compare them side by side rather than one after another with a gap in between. The research on this is unusually clear, and the benefit largely disappears if you spread the items out. So the next class puts the confusable ones in a single grid.

West Coast gives you clear, crisp and cutting. Hazy, which came out of New England, gives you cloudy, creamy and cushioned. Same first letter on both sides, opposite beers, which is why the pair sticks.

How to use this at a bar

You do not need to identify a beer blind. What you need is to predict one from a menu, and to recognise which of these four experiences you are having so you can ask for more of it next time.

The most useful move is this. After you finish a beer you enjoyed, work out which of the four signals in the bottom row applied, then say that to the next bartender. Something that feels soft rather than sharp is a more useful instruction than any style name.

    A description of texture is concrete and immediately actionable, and it points straight at hazy rather than West Coast. Balance means nothing you can act on, and craft describes how a beer was made rather than what it tastes like. You do not need style names to get what you want. You need one true sentence about how it felt.

3.2.5.2 The colour trap

One instinct, almost universal, almost always wrong. It gets its own screen because it causes more bad orders than anything else.

Why the instinct exists

Because it is right occasionally, and memorably. Imperial stouts really are black and strong. Light lagers really are pale and weak. Those are the cases people remember, so the rule feels reliable.

The underlying mechanism gives it no support at all. Colour comes from how far the grain was kilned. Alcohol comes from how much sugar got fermented. A brewer sets those two separately, and routinely does.

The replacement rule

Read the strength. Ignore the colour.

If you take one sentence out of this whole module and into a bar, take that one. Colour tells you what the malt was doing. It tells you nothing about strength, bitterness, weight, or how many you can have.

    The two black beers land on opposite sides, and so do two of the pale ones. That is the whole point. Colour and strength are set separately by the brewer. The Belgian tripel is the classic ambush, since it looks like a light lager and runs 8% to 10%.
  2. Guinness Draught has a lower strength than most IPAs.
    Answer: True
    True. It is 4.2%, against 5.5% to 7.5% for a standard IPA. It is also lighter in body than most people expect, partly because the nitrogen it is poured with makes it feel creamy rather than heavy. It is the most useful counterexample to carry around, because everybody has seen one.
  3. Click the colour band where a Black IPA sits.
    Answer: SRM 30 and up
    SRM 25 to 40, so the darkest band. And yet it is a hoppy beer of 5.5% to 9% with a citrus smell and only a hint of cocoa. If you can hold black and tastes like an IPA in your head at the same time, the colour trap has no power over you.
  4. Why does the dark equals strong instinct survive despite being unreliable?
    Answer: It is right in a few memorable cases, such as imperial stout and light lager
    It survives on its successes. Imperial stouts really are black and strong, light lagers really are pale and weak, and those cases stick. The counterexamples get filed away as exceptions. Meanwhile the actual mechanism gives the rule no support, because colour and strength are independent decisions.

Class 3.2.6

The bitterness number

IBU is printed on nearly every craft menu in America and it does not measure what people think it measures.

3.2.6.1 What the number really is

It is a light measurement that happens to track bitterness in a laboratory, and stops tracking it as soon as the beer leaves.

To measure IBU you take the beer, extract it into a solvent, and read how much light it absorbs at one particular wavelength. Then you multiply by 50. That is the whole method. Nobody tastes anything.

The problem is that three different compounds absorb light at that wavelength, and the test cannot tell them apart. They taste very different from each other.

So a heavily dry hopped beer reads higher than it tastes. Then everything else in the glass moves the result again: malt sweetness, bubbles, water chemistry, leftover sugar, and how sensitive you personally happen to be to bitter flavours.

The 1,000 IBU beer

The bitter compound stops dissolving at roughly 100 parts per million in a normal strength beer, and one IBU is defined as one part per million of it. So about 100 IBU is a hard physical ceiling.

Every beer advertised at 1,000 or 2,500 IBU is quoting a number calculated from the recipe, not one measured in the finished beer. The liquid cannot physically hold that much. More alcohol raises the ceiling a little, so a 15% beer might reach 120, but nothing gets close to four figures.

Bitter is a taste. Harsh is a texture.

These two get confused constantly, and separating them will immediately make you better at describing beer. Bitterness is a taste, and it feels clean, like tonic water or black coffee. Astringency is something you feel rather than taste. Compounds from the hops called polyphenols bind to the proteins in your saliva. That strips the lubrication out of your mouth. It feels like sucking on a dry teabag, and it lingers after you swallow.

In heavily hopped hazy IPAs this has a name, hop burn, and the Brewers Association treats it as a fault above low levels. It is why a 100 IBU West Coast IPA can taste clean and pleasant while a 35 IBU hazy can feel rough. The numbers are not lying. They are measuring the wrong thing.

Worth remembering

Bitter you taste. Burn you feel.

One is a flavour on your tongue. The other is your mouth drying out. Once you can separate them you will notice you have been mixing them up for years.

    False, and this surprises people. Above about 30 IBU, dry hopping actually reduces bitterness, because the hop material physically absorbs the bitter compound back out of the liquid and replaces it with weaker ones. Below 20 IBU the effect reverses and dry hopping does add bitterness.
  4. Your beer feels rough and drying, like a dry teabag, rather than tasting bitter. What is it?
    Answer: Astringency, which is a texture rather than a taste
    Astringency. Compounds from the hops bind to the proteins in your saliva and take the lubrication out of your mouth, so it is something you feel and it lingers after swallowing. Bitterness is a taste and it clears. In hazy IPAs this is called hop burn and it is treated as a fault above low levels.

Why an IPA goes off fastest

An IPA starts dying the moment it is sealed, because the thing that makes it good is the most fragile thing in the glass.

3.2.7.1 The four killers

Malt, alcohol and colour are stable. Hop smell is not.

Hop aroma evaporates, reacts with air, and is destroyed by light. Malt character, alcohol, colour and body are all comparatively stable by comparison.

Worse, the bitterness fades on a different schedule from the smell. So a stale IPA does not simply get quieter. It goes out of balance and turns malty, papery and harsh. A stale stout is duller. A stale IPA is wrong.

Worth remembering

HOTL. Heat, Oxygen, Time, Light.

Never check your IPA into the HOTL. All four are working against the beer from the second it is sealed, and all four are partly under your control at the moment you buy it.

From a single beer tracked over three months. An honest caveat: a blind panel of 21 people testing the same question over eight weeks found a much smaller difference, and slightly more of them preferred the warm stored can. Refrigeration clearly helps. The claim that a hazy is dead in a month is plausible from experience and weakly supported under blind conditions.

Light is the fastest of the four

Blue light breaks down the bitter compound in beer, and the fragments recombine with sulphur to make something that smells like skunk. You can detect it at about four parts per trillion. On a sunny patio you can notice it developing by the bottom of the glass.

Here is the part that catches people out. Because an IPA contains far more of the bitter compound than a lager does, it has far more raw material for the reaction. An IPA is more vulnerable to light than ordinary beer, not less.

Reading a date code

Packaged on is data. Best by is a commercial judgement, where the brewery weighs freshness against how long it wants the beer to stay on a shelf. There is no federal standard for beer freshness dating in the United States, so it is entirely voluntary.

Typical practice sets an IPA at 90 days. One brewery runs a deliberately tight 35 day window. For a hazy, aim for under 30 days and refrigerated the whole way.

3.2.8.1 What is actually true about the history

You will hear the myth version at a bar. The real one is more interesting and takes the same amount of time to tell.

The version you will be told

George Hodgson invented IPA in the 1780s. He loaded a beer with extra hops and extra alcohol so it would survive the six month voyage to India. Ordinary beer, and porter especially, spoiled on the way.

Almost every part of that is either unsupported or false.

What actually happened

  • Hodgson's advantage was location and credit, not recipe. His brewery sat next to the docks, so ship captains went to the nearest brewer, and he offered them up to 18 months to pay.
  • The whole India beer trade was about 9,000 barrels a year, which was under half a percent of what London brewed. It was a small business, not an empire.
  • Russia banned ale imports in 1822, which destroyed the export trade of the Burton brewers. They needed a new market and were pointed at India. That is the documented cause of the shift.
  • The London to Burton railway opened in 1839, and that is what let Bass and Allsopp reach the whole country and take the market from Hodgson.

When did the phrase India Pale Ale first appear in print?

  • Sydney Gazette, August 1829. Uses the phrase East India pale ale. The historian who found it suspected it was a local retailer's wording rather than industry language.
  • Liverpool Mercury, 30 January 1835. The first known British use.
  • The Times, 15 June 1837. India Pale Ale without the East.

All three are defensible, and the same historian revised his own answer twice as earlier citations turned up. Quote all three and you are being more accurate than most books on the subject.

Three of the turning points in the American revival were accidents. The Cascade hop was available to early craft brewers because Coors had bought millions of pounds of it, decided it was too aromatic for their lagers, and pulled out. The Double IPA was invented in 1994 by a 24 year old who wanted something big enough to hide the off flavours from his crude equipment. And the haze in a New England IPA was, in the words of the man who started it, never the intention. It was a byproduct of how he got the flavours he wanted.

    The three documented items all undercut the romantic story. Porter travelled fine, IPA was not especially strong, and it was drunk cold. The two myths make the better anecdote, which is exactly why they survived.

    The 1822 Russian ban wrecked the trade the Burton brewers already had, and they were persuaded to replace it with India. This is much better evidenced than the popular story about Hodgson gouging ship captains, which is repeated everywhere and rests on very little.

    The first three. Cascade was surplus from a large brewery deciding it did not want it. The Double IPA was made to hide off flavours from crude equipment. And the haze was, in its inventor's words, never the intention. Beer history involves far more accident than the marketing suggests.

    Answer: False
    False, and it is a satisfying one to be able to correct. Accounts from India in the 1820s to 1850s describe the beer being drunk as cold as ice could make it. The warm beer association comes from British cask ale, which is served at around 52F to 55F. That is a serving format, not a rule about hoppy beer.

General ordering is Module 4. These are the parts that only apply to this style.

The one question worth asking

How fresh is it, or when was that canned.

For most styles this is a slightly odd question. For an IPA it is the question, and any decent bar will know the answer and be pleased you asked. Under 30 days for a hazy, under 90 for a standard IPA. If the answer is that they are not sure, order something else where age matters less. That is not a snub, it is the correct reading of what you just learned.

Two more things specific to this style

  • Serve it at 45F to 50F, which is 7C to 10C. A household fridge runs at about 38F, which is too cold. At that temperature you are holding down the smell you paid for. Take the can out ten to fifteen minutes before you pour, or pour it and wait five.
  • A Double IPA in a 10 ounce glass is standard practice above about 7.5%, not a short measure. Ask for a smaller pour if one is not offered.

Food, in one mechanism

Bubbles and bitterness cut through fat. Fat coats your tongue, and the carbonation and the bitterness strip it off and reset your mouth between bites. That is a different trick from what wine does, and it is the whole reason an IPA works so well with fried food.

The popular advice is backwards, and the correction comes from the Brewers Association's own consumer website. Three things work against it. Alcohol triggers the same pain receptor that chilli heat does. Bitterness and chilli heat amplify each other. And carbonation stimulates pain receptors too.

The idea that beer washes the heat away also fails, because the compound that makes chilli hot dissolves in fat rather than water. Dairy works because a protein in milk physically pulls the compound off the receptor. Beer has no such protein and is mostly water.

None of that is a reason not to do it. Some people want the amplification. Just do not expect relief. If you want relief you want dairy, or something sweeter and less bitter.

    Mixing material from across a module and asking you to place it is harder than reviewing one topic at a time, and that difficulty is doing the work. It forces you to tell things apart rather than recognise them by context.

  5. A 16 ounce pour of a 9% hazy IPA. How many standard drinks?
    Answer: 2.4 drinks. The sum is ounces times strength divided by 0.6
    About 2.4. Sixteen times nine is 144, divided by 0.6 gives 240, so 2.4 drinks. And because a hazy is soft and low in bitterness, it gives you almost none of the warning a 9% stout would. That combination makes it the easiest beer on any menu to misjudge.
  6. You are out with friends and want an IPA you will actually enjoy. What is the best opening line?
    Answer: I am new to this. I usually drink X, nothing too bitter. What would you put in front of me
    It does four things at once. It removes any possibility of being quizzed, it gives a real starting point, it says what you do not want, and it hands the decision over. Every published guide arrives at roughly this shape. Asking for the hoppiest gets you a contest, and asking for the most popular gets you somebody else's taste.

What an Ordinary Bitter is

The weakest beer in this course, and one of the hardest to brew. One page to come back to, then the single decision that creates the whole British Bitter family.

Light bodied and barely fizzy. Bitterness arrives early and holds through the swallow, with very little sweetness under it. The finish is dry and short. Hold a mouthful still and the bubbles hardly prickle, closer to cold tea than to soda.

Best Bitter, which is the same beer brewed stronger. Dark Mild, which is darker, sweeter and far less bitter. British Golden Ale, which is paler and cleaner with no caramel. American Pale Ale, which smells of grapefruit and pine rather than earth and marmalade.

An Ordinary Bitter is a pale amber British ale of about 3.5%. It is dry, quietly fruity, and more bitter than its strength suggests. Nearly everything interesting about it comes from how little alcohol it contains.

The tell that settles it

Two things, and the second is a sensation rather than a flavour. Look at the head. It is low, off white, and sometimes only a collar, and that is correct rather than a sign of a bad pour.

Then hold a mouthful still for a second. It barely prickles. A lager or an IPA fizzes against your tongue, and this does not. If the beer is soft, thin, dry and still tastes of something, you are holding a bitter.

Where the name came from

English drinkers coined it in the early 1800s. Pubs sold two everyday beers: mild, which was young and sweeter, and pale ale, which was hoppier. Customers asked for the bitter to tell the barman which one they wanted, and the name stuck.

So the word was never a boast about intensity. It was a way of not being handed the other one. Brewers only started printing it on their own pump clips near the end of the 1800s.

Bitter then became a draught product rather than a bottled one, and two later events shaped it. Crystal malt became common after the First World War, which is where the caramel note comes from. Wartime grain rationing pushed British beer strengths down, and they never fully came back up.

The American sheet is looser at both ends and allows a paler beer. The British one draws a tighter strength band and pushes the colour further towards copper. The overlap, roughly 3.2% to 3.8% and 25-35 IBU, is where almost every real example sits. Use the BJCP figures unless a competition tells you otherwise. The American range reaching to 4.2% is why one beer gets called Ordinary on one side of the Atlantic and Best on the other.

Temperature and glass

Serve it at 52F to 55F, which is 11C to 13C. That is cellar cool, not room temperature and not fridge cold. A British pint glass holds 20 imperial ounces, which is about 568 millilitres, and is roughly a fifth larger than the American pint you are used to.

What ABV, IBU and SRM mean. ABV is strength. IBU is a lab measure of bitterness. SRM is colour only, and it tells you nothing about weight.

    A small head, low fizz and a short dry finish. All three are physical rather than flavours, which makes them usable in a noisy bar. The thick lasting head is the tempting wrong answer, because it is what a nitrogen pour gives you, and correct cask beer simply does not carry that much gas.

    The amber to copper band. The style runs 8-14 SRM under the BJCP and 5-12 under the American sheet, so it starts in gold and settles into amber. Gold is the tempting answer because the palest examples really do land there, and most pints you meet are a clear light copper.
  4. Why did British drinkers start calling this beer bitter in the early 1800s?
    Answer: To tell the barman they wanted the hoppy pale ale rather than the sweeter mild
    It was a way of asking for one of two beers on the bar. Mild was young and sweeter, pale ale was hoppier, and bitter was the customer word for the second one. Naming it after its strongest feature is the tempting answer, and it is wrong: this beer is nowhere near the most bitter thing a modern bar sells.
  5. One word. Which other everyday pub beer was bitter originally being distinguished from?
    Answer: mild
    Mild, which was younger, darker and sweeter, and which outsold bitter for much of the twentieth century. Porter is the tempting answer because it is the other famous old London beer, but the choice a drinker actually faced at a country pub bar was mild or bitter.

3.3.1.2 One beer at three strengths

The decision behind this style is a number, and the same number is the only thing separating it from the next two styles in this module.

A brewer makes an Ordinary Bitter by putting less grain in the mash than they otherwise would. Everything else on this page follows from that, including the things that stop the beer tasting like weak tea.

Ordinary, Best and Strong

These are not three different beers. They are the same recipe at three gravities, and British breweries have sold them that way for well over a century. Say that plainly and the family becomes easy.

The names come from the pub price list, not from a quality panel. A brewery sold its cheapest bitter as Ordinary and its dearer one as Best or Special. Ordinary meant everyday. It was never an insult.

  • BJCP 2021. Treats them as three subcategories of one category, 11A, 11B and 11C, split purely on gravity. The category introduction covers the history for all three at once.
  • Brewers Association 2026. Gives them three separate entries under three separate names: Ordinary Bitter, Special Bitter or Best Bitter, and Extra Special Bitter.
  • British pub practice. Uses the words as a brewery price ladder. The trade normally calls anything up to about 4.1% a session bitter, 4.2% to 4.7% a best, and 4.8% and above a premium.

All three positions describe the same thing with different labels. Strength is the boundary, and the three sets of numbers do not line up, which is why the same beer can be filed differently in different rooms. Learn the ladder rather than the three names. If you can taste roughly how strong a bitter is, you can place it in any of the three schemes.

How strong is it. On this family that single question tells you which of the three you are drinking, because strength is the only thing the three names track. Every barman in Britain can answer it without thinking.

What mashing does, and what gravity measures. Gravity is how much sugar is dissolved in the liquid before fermentation. It sets the alcohol, and in this family it sets the style name too.

    Read the ABV and nothing else. That is genuinely the whole test for this family, which is why this looks too easy and is not. The trap is expecting the flavours to sort them for you. They do not, because the three bands share a grain bill, a hop and a yeast.
  3. An Ordinary Bitter tastes dry because the brewer adds something to dry it out.
    Answer: False
    False. The dryness comes from a British ale yeast eating most of the sugar, plus there being little sugar to start with. Nothing is added. The tempting reading is that dryness is an ingredient, when it is usually the absence of one.
  4. Match each neighbour to the one test that separates it from an Ordinary Bitter.

    Strength, balance, colour and hop character. Four different checks, which is why the grid is worth learning as a set. Dark Mild is the hardest pair, because it sits at almost the same strength, and the separator is which way the balance leans rather than how big the beer is.
  5. One word. Which malt gives an Ordinary Bitter its amber colour and its small amount of toffee sweetness?
    Answer: crystal
    Crystal malt, sometimes sold as caramel malt. It is stewed wet so the sugars inside caramelise, and it leaves sweetness the yeast cannot remove. Chocolate malt is the tempting answer because it also adds colour, but it would push the beer brown and put cocoa in a style that should not have any.

You can spot one by its low head and low fizz, and you know that Ordinary, Best and Strong are one beer at three gravities.

  • A thinner wort is the whole style. Everything else exists to make a thin beer worth drinking.
  • Ordinary, Best and Strong track strength and nothing else. Ordinary means everyday, not inferior.

Drinking it, and what cask actually means

Whether you will enjoy a 3.5% beer, how to order one from a hand pump, what to eat with it, and the thing Americans get wrong about cask ale almost every time.

  1. Predict from tastes you already have whether you will like one
  2. Recognise a cask pour and ask the two questions that matter
  3. Tell correct cask serving from a genuine fault, and stop calling it warm and flat

3.3.2.1 Will you like it, how to ask, and what to buy

The hardest part of this style is not the flavour. It is believing that a 3.5% beer is worth ordering.

Order one if you already like any of these

  • Strong black tea with no sugar. That dry, faintly bitter, slightly drawing finish is the closest everyday match.
  • Bread crusts, cream crackers and plain biscuits. The malt here is doing almost exactly that.
  • Marmalade, or the white pith of an orange. British hops and British yeast together produce that.
  • Drinks you can have several of over a few hours without losing the evening.
  • Sitting still and talking. This beer is designed to be a background to something else.

Leave it for now if any of these is true

  • You want a big smell. The aroma here is quiet on purpose and always will be.
  • You want sweetness. This finishes dry and stops.
  • You judge a beer by how much is in it. At 3.5% you will feel short changed until you understand why it is 3.5%.

Why the low strength is the point

Alcohol carries flavour and gives a beer body. Take it away and you take away the beer's two easiest tools. A brewer making a 3.5% beer that still tastes of something has to earn every bit of it with malt choice, hop rate and yeast.

This is why the style exists rather than despite it. A British pub session lasts hours and people drink in rounds. A beer you can have three of and still walk home is a different product from a beer you can have one of.

What three pints actually costs you

A British pint holds about 568 millilitres. Three of them at 3.5% is roughly 3.4 American standard drinks. Two 16 ounce American pints of a 6.5% IPA is about 3.5. Three pints of bitter across an evening and two IPAs are almost the same drink, and one of them lasts three times as long.

That is the trade the style is making. It is worth doing the arithmetic once, because the numbers surprise most people.

At the bar

  • Look along the bar for a hand pump: a tall handle the barman pulls, rather than a small tap they push. A hand pump means cask, which is how this beer is meant to arrive.
  • Ask when the cask was tapped. Once a cask is opened it should be sold inside about three days, so a fresh one is a fair thing to ask about.
  • Ask for a pint unless you have somewhere to be. At this strength a half is a small order, and nobody will mind either way.
  • Expect it cool rather than cold, with a small head and very little fizz. That is the beer working, not the bar failing.
Say this out loud
  • A pint of the bitter please.
  • Is that one on the hand pump.
  • When did that cask go on.

The last one is the most useful sentence on this page. It is the actual question the serving method raises, and any bar that keeps cask will have an answer ready.

What to buy this week

This is the hardest anchor in the course, and pretending otherwise would not help you. A true 3.5% bitter is almost impossible to buy in a bottle or a can in the United States in 2026, because the style barely survives being packaged and shipped. Three honest options, in order of how close they get you.

  • A cask pint at an American brewery that keeps hand pumps. Machine House Brewery in the Georgetown neighbourhood of Seattle brews English styles in small batches. It serves them from traditional hand pumps in its taproom, Wednesday to Sunday. Its Dark Mild is 3.7% and its Best Bitter is 4.2%. Taproom only, and worth a detour if you are anywhere near.
  • A British style pub with a real hand pump. These exist in most large American cities. Ask before you go, because a great many pubs that look the part pour everything from kegs.
  • Boddingtons Pub Ale, the nitrogen can, stocked by most large American chains in 16 ounce four packs. Be honest with yourself about what it is. At about 4.7% it is well above the Ordinary band, and the nitrogen gives it a thick creamy head that a cask pour never has. It is an approximation, not the thing itself.
If you want the real thing

American cask festivals are the reliable route. The New England Real Ale eXhibition has run for years and pours dozens of casks over a weekend. Several American brewers make session bitters for exactly this kind of event and never package them, which is why you cannot find them on a shelf.

    The first three are the exact flavour family this beer is built from, and tea is the strongest single predictor because it matches the texture as well as the taste. Wanting a big aroma points somewhere else entirely. This beer is quiet on the nose by design, and no amount of good keeping will change that.
  2. You see a tall handle on the bar that the barman pulls down rather than a small tap they push. What does it tell you?
    Answer: The beer is cask, so it comes out with no added gas at about 52F to 55F
    It is a hand pump, and it means cask. The barman is physically lifting beer out of a container in the cellar, with no gas pushing it. Nitrogen is the tempting answer because both give a soft pour, but a nitrogen tap is pushed like any other and produces a much thicker head.
  3. A beer at 3.5% has to taste watery, because there is not enough alcohol in it to carry flavour.
    Answer: False
    False, and this is the useful surprise in the style. Low alcohol makes flavour harder to deliver, not impossible, and brewers compensate with crystal malt, a high hop rate for the size, and low carbonation. Getting it right at 3.5% is considered a harder job than getting it right at 6%.
  4. Put these four servings in order, from least alcohol in the glass to most.
    Answer: 1. A half pint of Ordinary Bitter at 3.5% 2. A British pint of Ordinary Bitter at 3.5% 3. A British pint of Best Bitter at 4.3% 4. An American pint of IPA at 6.5%
    Size and strength together, not strength alone. The half of bitter carries about a fifth of the alcohol of the American IPA pint, even though the two beers look similar in a glass. People rank by ABV alone and forget that a British pint is about a fifth larger than an American one.
  5. Which Seattle brewery serves English style ales from traditional hand pumps in its Georgetown taproom, including a 4.2% Best Bitter?
    Answer: machine house
    Machine House Brewery, which is taproom only and open Wednesday to Sunday. It is named here rather than a bottle because no true Ordinary Bitter is reliably packaged for the American market. An anchor you cannot buy teaches nothing, so a taproom you can visit beats a bottle that does not exist.

3.3.2.2 Food, faults, and the cask myth

What to eat, how to tell correct cask serving from an actual problem, and the thing American drinkers say about cask ale that is simply not true.

What to keep away from it

Rich desserts, chocolate, and anything strongly smoked. There is not enough beer here to stand up to them, and the bitterness turns harsh next to sugar. Very hot chilli is a poor match too, because bitterness and heat sharpen each other.

What a good one does

  • It arrives cool rather than cold, at roughly 52F to 55F, which is 11C to 13C.
  • The head is low and off white, and a thin collar is acceptable.
  • It is clear, not hazy. A cask that has settled properly drops bright.
  • The finish is dry and short, and you want the next mouthful straight away.

The faults to name

What you getWhat it means

Cloudy, with a yeasty or muddy tasteThe cask was moved or served before the sediment settled. Some British regions do serve a hazy pint on purpose, so ask before you complain.
Wet cardboard or stale sweetness in a bottleOld beer. Pale low strength styles show their age faster than dark ones, which is exactly why exported bottles of bitter so often disappoint.
Cask ale is warm and flat

This is the most repeated wrong thing in British beer, and American drinkers hit it the first time a hand pull lands in front of them. Both halves are false, and it is worth taking them one at a time.

It is not warm. Cask is served at 52F to 55F, which is 11C to 13C. A domestic fridge runs at about 38F and a heated room is nearer 70F. Cask sits between them and much closer to the fridge. It feels warm only because you were expecting something ice cold.

It is not flat either. A cask beer finishes fermenting in the container it is poured from, and that fermentation makes its own gas. The result is usually under 2 volumes of carbon dioxide, against roughly 2.4 to 2.7 for a keg, a can or a bottle. That is less gas, not no gas.

Where the myth comes from is worth knowing. Cask is perishable and needs a competent cellar, so badly kept pints are common, and a tired one really is flat and sour. People also meet cask at the wrong temperature and file the shock as a fault. If a pint has no prickle at all and tastes vinegary, that is a genuine fault, and you can say so.

One more correction while you are here. Cask is a serving method, not a style. Almost any beer can be put in a cask. What you are ordering is a bitter, and cask is how it gets to your glass.

Worth remembering

Ordinary means everyday, not inferior.

The three bitters are one beer at three gravities, and the names came off a pub price list. Ordinary was simply the one people drank most of. It is the hardest of the three to brew well, because at 3.5% there is nothing to hide behind.

    Cutting, cutting, matching, cutting. Only two mechanisms are doing all this work, which is why pairing gets easier once you stop memorising lists. The curry surprises people, because a 3.5% beer sounds far too small for spiced food, and its size is exactly the advantage.

    The first three are what correct cask serving looks like, and American drinkers report all three as faults constantly. The last three are real problems: air in the cask, yeast rushed off too early, and a cask that has given up. The line is between low carbonation and none at all.
  3. Cask ale is served flat, with no carbon dioxide in it at all.
    Answer: False
    False. A cask beer finishes fermenting inside the container it is poured from, and that fermentation makes its own gas, usually under 2 volumes against roughly 2.4 to 2.7 for a keg or a can.     Diacetyl. The guidelines allow a trace at most in this style, so a clear butter popcorn character is a fault. Crystal malt is the tempting answer because caramel and butterscotch sound like neighbours. Caramel is a flavour you taste, while this one also coats your tongue, and the film is the giveaway.
  5. Complete the hook for this style: ordinary means everyday, not _____.
    Answer: inferior
    Inferior. The three bitter names came off a pub price list, where Ordinary was simply the cheapest and most drunk of a brewery's bitters. If you carry one sentence out of this style, carry that one. A 3.5% beer with real flavour is a harder brewing job than a 6% one.

What a Best Bitter is

The middle of three bitters, and the one you are most likely to meet on an American bar. One page to come back to, then what the word best actually meant.

3.4.1.1 The specimen plate

Field marks first. This is the rung of the ladder that most British breweries build their reputation on.

Ale, fermented warm. The middle of the three British Bitters. · England. A brewery's dearer bitter, sold beside its cheaper one on the same bar.

Ordinary Bitter, which is the same beer half a percent weaker. Strong Bitter, which is the same beer a percent stronger. American Pale Ale, which smells of grapefruit and pine. British Golden Ale, which is paler and has no caramel at all.

A Best Bitter is a pale amber to copper British ale of about 4.2%. It is the same beer as an Ordinary Bitter with more grain in the mash. That extra grain is nearly the whole difference.

The tell that settles it

The colour and the fizz put you in the bitter family: amber, clear, a low off white head, and almost no prickle. Those you already know from 3.3.

The tell that separates it is physical. Hold a mouthful still and press it against the roof of your mouth. There is a slight cushion there, a sense of the beer having weight, that an Ordinary Bitter never gives you. The caramel note arrives with it.

Where the name came from

Off the pub price list. A British brewery usually sold two or three bitters at once, and the words on the pump clip told you which one cost more. Best meant the dearer of the two, and some breweries used Special instead.

That is a commercial label rather than a verdict. The BJCP does note that the dearer beer often used better ingredients, so the words are not pure marketing. Even so, the number the word tracks is the gravity, not a quality score.

This is the rung British brewers are usually judged on. Fuller's London Pride, Timothy Taylor Landlord and Harvey's Sussex Best are all Best Bitters, and each is the beer its brewery is known for.

Three schemes, three sets of edges, and they do not line up. A 4.0% cask beer is a Best Bitter to the BJCP, an Ordinary Bitter to the Brewers Association, and a session bitter in a British pub. The overlap where all three agree is roughly 4.2% to 4.6%, and that is where the famous examples sit. Take the boundary numbers loosely and the ladder seriously.

The same beer at two strengths, in one brand

Fuller's London Pride is 4.1% in the cask you drink in London. The bottle, can and export keg are 4.7%. It is the same beer name and the same brewery, and the strength moves depending on how it is packaged and where it is sold. That single fact does more to explain this family than any style sheet.

What ABV, IBU and SRM mean. ABV is strength. IBU is a lab measure of bitterness. SRM is colour only, and it tells you nothing about weight.

    Body, caramel and finish length, all of which follow from more malt in the mash. The hop smell is the tempting wrong answer, because in most other families a step up in strength brings a step up in aroma. Here the hop rate barely moves, so the extra grain shows up as weight rather than smell.
  3. The word best in Best Bitter is a quality rating awarded by a British trade body.
    Answer: False
    False. It came off a brewery's own price list, where best simply meant the dearer of two bitters on the same bar. It is tempting because best is an ordinary English word with an obvious meaning. The BJCP does note that the dearer beer often used better ingredients, but the word tracks the gravity.
  4. Fuller's London Pride is 4.1% on cask in London and 4.7% in the bottle sold in America. Why?
    Answer: The packaged and export version is brewed to a higher gravity than the cask version
    The brewery makes the packaged version stronger, which is common British practice for beers that travel. Bottling is the tempting answer because something clearly changes between the two, but no packaging step creates alcohol. It also means the beer you can buy in America sits at the top of the Best Bitter band rather than the middle.
  5. One word. Which malt gives a Best Bitter its copper colour and the caramel note behind the bitterness?
    Answer: crystal
    Crystal malt, stewed wet so the sugars inside caramelise, which leaves sweetness the yeast cannot remove. There is more of it here than in an Ordinary Bitter, which is why the caramel is easier to find. Chocolate malt is the tempting answer because it also adds colour, and it would push the beer brown and add cocoa.

3.4.1.2 More malt, nothing else

A brewer turns an Ordinary Bitter into a Best Bitter with one change, and knowing which change makes the whole family readable.

Put more grain in the mash and you get a sweeter wort, which is the sugary liquid the yeast will later ferment. More sugar in means more alcohol out, and more body left behind. That is the change.

If someone hands you an unlabelled half of British bitter, which single fact would let you name which of the three it is. Not the smell and not the colour. The strength, and there is no shortcut to it other than asking.

What mashing does, and what gravity measures. Gravity is how much sugar is dissolved in the liquid before fermentation. Raise it and you raise the alcohol, the body and the style name all at once.

    The first three describe one variable moving. The fourth is the one that matters most, because it says what does not change. People expect three names to mean three recipes, and here three names mean three gravities.

    The ABV and nothing else. The 3.8% entry is the interesting one, because it sits exactly on the line between two bands and different guidelines put it in different places. Nobody can taste the difference between 3.8% and 3.9%, which tells you how much these boundaries are worth.
  5. One word. What is the sugary liquid called that a brewer draws off the grain, before the yeast turns it into beer?
    Answer: wort
    Wort, pronounced to rhyme with hurt. How much sugar is dissolved in it is the gravity, and in this family the gravity is the style name. Mash is the tempting answer because it is the step immediately before, and the mash is the grain and water together rather than the liquid drawn off it.

You can spot the small cushion of body that separates a Best from an Ordinary, and you know that best was a price, not a verdict.

The two lines worth keeping
  • More grain in the mash, and nothing else. The hops, the yeast and the glass do not move.
  • Best meant the dearer of two bitters on the same bar. It was never a quality rating.

Drinking it, eating with it, and the bitterness myth

Whether you will enjoy one, what to say at the bar, what to eat, and why the beer called bitter is nowhere near the most bitter thing on the menu.

By the end of this class you will be able to

  3. Judge an imported bottle honestly, and stop treating the name as a warning

3.4.2.1 Will you like it, how to ask, and what to buy

This is the easiest of the three bitters to find in America, and the easiest to order badly.

Order one if you already like any of these

  • Toast with thick cut marmalade. That is the closest single match to what this beer smells and tastes like.
  • Strong tea, with or without milk. The dry drawing finish is the same sensation.
  • Digestive biscuits, shortbread, and the crust of a good loaf.
  • Salted caramel, in small amounts. The toffee here is restrained and never sugary.
  • Drinking slowly for a couple of hours rather than quickly for one.

Leave it for now if any of these is true

  • You want fruit on the nose. The fruitiness here is subtle and comes from yeast, not from hops.
  • You want it very cold. This beer closes up below about 45F and gives you nothing.
  • You want a big beer. At around 4.3% this is deliberately modest, and 3.5 is where you go for size.

Why it stays small

A Best Bitter could easily be brewed at 6%. British brewers do not, because the beer exists to be drunk in rounds over an evening. Strength is the constraint the whole recipe is built around.

Compare it with the American IPA taught at 3.2, which runs 6% to 7.5%. One American pint of that carries roughly the alcohol of a British pint and a half of Best Bitter. Neither is better. They are answers to different questions.

At the bar

  • Ask whether it is on cask or on keg. A tall handle the barman pulls is cask, a small tap they push is keg. Cask is softer and cooler, keg is fizzier and colder.
  • Ask for a pint. Remember that a British pint is about 568 millilitres and an American one about 473, so the same word buys you a fifth more in London.
  • Do not send it back for being cool. It should arrive at 52F to 55F, which is 11C to 13C.
  • If you are buying a bottle in America, check the date. Pale low strength beers travel badly, and a tired one tastes of sherry and cardboard.
Say this out loud
  • A pint of the Pride please, and is that on cask or keg.
  • How long has that cask been on.
  • Can I see the date on the bottle before you open it.

The third one feels awkward the first time and it is completely normal. Any bar that stocks imported British ale has been asked it before, and a good one will tell you without being asked.

What to buy this week

  • Fuller's London Pride, 4.7% in the bottle, can and export keg, and 4.1% on cask in London. Fuller's named Total Beverage Solution its exclusive American importer in April 2026 and relaunched Pride in both draft and package, so this is the easiest one to find now. Buy this first.
  • Timothy Taylor Landlord, 4.3%. Widely held up as one of the best beers in Britain and worth going out of your way for. It reaches America in 500 millilitre bottles through specialist shops rather than supermarkets, so ring ahead or order online.
  • Machine House Best Bitter, 4.2%, from the hand pumps in its Georgetown taproom in Seattle. Taproom only. If you can get to it, this is the closest an American drinker gets to the real serving method.
The comparison that teaches the most

A bottle of London Pride and a bottle of American Pale Ale from 3.1, side by side, at the same temperature. Both sit around 30 to 40 IBU. The English one smells of marmalade and toast and finishes soft, the American one smells of grapefruit and pine and finishes sharp. Same bitterness on paper, two different beers.

    London Pride, relaunched through Total Beverage Solution in 2026 in both draft and package. Harvey's is superb and barely reaches America outside a few specialist shops. Boddingtons is genuinely easy to find, and it is a nitrogen can at about 4.7% rather than a cask Best Bitter, so it is an approximation.
  4. A pint in an American bar holds the same amount as a pint in a British pub.
    Answer: False
    False. An American pint is 16 American fluid ounces, about 473 millilitres. A British imperial pint is 20 imperial fluid ounces, about 568 millilitres, so it is roughly a fifth larger. That gap matters in this family, because the whole style is built around how much you can drink in an evening.
  5. One word. Which breakfast spread is the closest everyday match to how a Best Bitter smells and tastes?
    Answer: marmalade
    Marmalade, which brings orange peel bitterness and a little caramel sweetness together in exactly the proportion this beer does. Jam is the tempting answer because it is the obvious fruit spread, and jam is only sweet. The bitterness in the peel is what makes marmalade the right comparison.

3.4.2.2 Food, faults, and the name that scares people off

What to eat, the one fault that ruins most imported bottles, and why the word bitter puts people off a beer that is not very bitter.

Chocolate desserts, delicate white fish and fresh green salads. The first overwhelms the beer, and the beer overwhelms the other two. Anything built on fresh lemon or lime will clash with the earthy hop character.

What a good one does

  • The caramel note is a note, not the main event. Bitterness still leads.
  • It is clear and the head is low and off white.
  • The finish is dry and the beer invites another mouthful straight away.
  • On cask it arrives cool and barely fizzy, at 52F to 55F.

The faults to name

Butterscotch, or a slick buttery film on your tongueThis is diacetyl, a compound yeast makes early in fermentation and normally clears up afterwards. The guidelines allow no more than a trace here. A clear butter popcorn character means the yeast was rushed.
A sharp vinegar edge on a cask pintThe cask has been open too long. A tapped cask should be sold within about three days, and after that air wins.
Nothing at all on the nose or the finishEither it is far too cold or the beer is old. Give it ten minutes on the table before you decide which.
Do not learn the fault as the style

Many Americans meet this family for the first time through an imported bottle that has spent months getting to them. The toffee and sherry they taste is damage, and they file it as what English beer is like. If your only bitter has come from a shelf, find a fresh cask pint before you decide what you think.

Bitter must be the most bitter beer on the menu

It is usually not close. A Best Bitter runs 25 to 40 IBU. The American IPA taught at 3.2 runs 40 to 70, and a Double IPA goes past 100. On the numbers, bitter sits in the middle of a modern beer list rather than at the end of it.

The name is not a claim about intensity. It was how a customer in the early 1800s asked for the hoppy pale ale instead of the sweeter mild. The word was doing the job a pump clip does now, and it stuck around after the beer it was contrasted with faded away.

There is one honest reason a bitter can taste more bitter than its number suggests. There is very little malt sweetness and very little alcohol standing in the way. Put 32 IBU on a thin dry 4.2% beer and you notice all of it. Put the same 32 IBU on a sweet 7% beer and you barely find it.

So the useful version is this. Bitter is not very bitter, but it is bitter first. The balance leans that way even though the number is modest, and that is what the name was always describing.

Worth remembering

Best means bigger, not better.

Best was the dearer beer on a brewery's price list, which meant more malt in the mash and a higher gravity. It says nothing about quality, and a well kept Ordinary Bitter will beat a tired Best every time. The word tracks the number in the ABV column.

What a Strong Bitter is

The top of the ladder, the beer most likely to be labelled ESB, and the point where this family stops being something you drink several of.

Ale, fermented warm. The strongest of the three British Bitters. · England. The premium bitter on a brewery's list, and the one sent abroad in bottles.

A Strong Bitter is a copper coloured British ale of roughly 5% to 6%. It is the same beer as the two before it with more grain again. The extra grain buys body, hop flavour and a little warmth.

The tell that settles it

The colour is deeper and the smell is louder, but neither is reliable on its own. The tell is what happens after you swallow. There is a faint warmth at the back of your throat that an Ordinary or a Best never produces.

That warmth is the alcohol. It is the first point in this family where you can feel the strength rather than only read it, and once you have noticed it once you will find it every time.

Where the letters came from

ESB stands for Extra Special Bitter, and it began as one brewery's product name. Fuller's of London launched ESB in 1971, built from an older strong ale it had been selling as a winter beer. It went on to win CAMRA's Champion Beer of Britain three times.

The beer became famous abroad, and American brewers started putting the three letters on their own beers. In England the name stayed a Fuller's trademark, and the brewery has taken legal action against British competitors who used it.

So the same three letters mean different things in different countries. In America ESB is a style category. In England it is essentially a brand. Both facts are true at once, which is why this style has two names.

Sources disagree

How strong and how bitter a Strong Bitter is, and what to call it.

  • BJCP 2021, style 11C Strong Bitter. 4.6% to 6.2% ABV, 30-50 IBU, 8-18 SRM, original gravity 1.048-1.060. Notes that ESB is now primarily a Fuller's trademark in England.
  • Brewers Association 2026, Extra Special Bitter. 4.8% to 5.8% ABV, 30-45 IBU, 8-17 SRM, original gravity 1.046-1.060. Uses ESB as the category name.

The British sheet is wider at both ends and avoids the trademark. The American sheet is narrower and uses the trademark as a style name. They agree closely on colour and on where the middle sits, roughly 5% to 5.8% at 30-45 IBU. Where they part company is the top end: a 6.1% beer is a Strong Bitter to the BJCP and too strong for the American category. Use the BJCP figures unless a competition tells you otherwise.

Temperature and glass

Serve it at 52F to 55F, which is 11C to 13C, the same as the other two. A pint glass is traditional, and a half is a perfectly respectable order at this strength. Straight from a cold fridge the fruit and caramel disappear and you are left with bitterness on its own.

What ABV, IBU and SRM mean. ABV is strength. IBU is a lab measure of bitterness. SRM is colour only, and it tells you nothing about weight.

    Warmth, a louder nose and more body, all of which follow from more grain in the mash. The warmth is the only one that is genuinely reliable on its own. Roasted coffee is the wrong family entirely: this style stays pale and any roast character means you are holding a porter or a stout.
  3. Where did the letters ESB come from?
    Answer: A Fuller's product name, launched in 1971, which American brewers later adopted as a style name
    A single brewery's brand. Fuller's launched ESB in 1971, it became famous abroad, and American brewers began using the letters on their own beers. CAMRA is the tempting answer because it was founded in 1971 too and does campaign about beer, and it never issued the name. Fuller's still defends the trademark in England.
  4. Three words. What do the letters ESB stand for?
    Answer: extra special bitter
    Extra Special Bitter. Special is doing the same job the word best does one rung down: it is a price tier off a brewery's list. Extra Strong Brew is the tempting answer because strong is what the beer actually is, and the word in the name is special, not strong.
  5. The BJCP and the Brewers Association agree on where the top of this style sits.
    Answer: False
    False. The BJCP takes Strong Bitter up to 6.2%, while the American Extra Special Bitter category stops at 5.8%. A 6.1% beer is comfortably in style to one body and out of style to the other. The two do agree closely on colour and on the middle of the range, which is why the disagreement is easy to miss.

3.5.1.2 More grain, harder water

Two decisions lift a Best Bitter into this band, and one of them is not an ingredient at all.

The first decision is the one you already know: more grain in the mash. The second is the water, and it is the reason a Burton brewed bitter tastes sharper than a London one at the same strength.

Whether ESB is a British beer style at all.

  • Fuller's and British trade practice. ESB is a Fuller's product name, launched in 1971 and defended as a trademark. British brewers who want to sell a beer in this band call it a premium bitter or use their own name for it.
  • Brewers Association 2026. Extra Special Bitter is a named competition category with its own numbers, and hundreds of American breweries label beers ESB.
  • BJCP 2021. Calls the style Strong Bitter, notes that ESB is now primarily a Fuller's trademark in England, and warns that American beers labelled ESB are often malty reddish ales at ordinary American strength.

A brand became a category, but only on one side of the Atlantic. Order an ESB in London and you will be handed one specific beer. Order one in Denver and you may be handed almost anything amber. The BJCP warning is the practical part: an American beer labelled ESB is frequently not a strong bitter at all, so read the ABV rather than the letters.

American Amber Ale

The same colour and a similar strength, with the balance the other way round. Sweeter, more caramel led, less bitter, and often hopped with American varieties. Many American beers labelled ESB are actually this.

What water does in beer. Water is the fourth ingredient. Its minerals change how a beer finishes, and sulfate sharpens bitterness and dries the end.

    The start of the boil. Hops need long hard heat before their resin turns into bitterness, so early additions do that job and late ones mostly add smell. Dry hopping is the tempting answer because it is what modern hoppy beers are known for, and it adds aroma and almost no bitterness at all.

    The ABV column decides every one of them. This is the third time you have sorted this family and it should now feel mechanical, which is the point. Three names, one variable. Nothing about the flavour will tell you which band a beer is in, so read the number.
  3. Why do brewers add sulfate salts to the water for a strong bitter?
    Answer: Sulfate sharpens the edge of the bitterness and dries the finish, copying the natural water at Burton upon Trent
    It changes how the beer finishes. Burton's water is naturally high in sulfate, its pale ales became famous for it, and brewers everywhere now copy the trick. Raising the alcohol is the tempting answer because brewing sugar does exactly that. Sugar is a fermentable, and sulfate is a mineral that changes nothing about strength.
  4. An American beer with ESB on the label is reliably a British style strong bitter.
    Answer: False
    False, and the BJCP says so directly. It warns that American beers labelled ESB are often malty reddish ales at ordinary American strength, which is really an American Amber Ale. It is tempting because the letters look like a specification. Read the ABV and the balance instead of the label.
  5. Match each neighbour to the one test that separates it from a Strong Bitter.

Drinking it, eating with it, and the ESB myth

Whether you will enjoy one, why the half pint stops being a shy order here, what to eat, and what the three letters really mean.

3.5.2.1 Will you like it, how to ask, and what to buy

This is the easiest bitter to buy in America and the one where the pacing argument from 3.3 finally runs out.

Order one if you already like any of these

  • Thick cut marmalade, or the peel of a blood orange. More of it here than in either weaker bitter.
  • Dried apricot, prunes and stewed plums. British yeast at this strength produces all three.
  • Strong tea, and the drying feeling it leaves behind.
  • Toffee, caramel and browned butter, in small quantities rather than as dessert.
  • A finish that is dry and mineral rather than soft. The hard water gives you that.

Leave it for now if any of these is true

  • You want citrus and pine on the nose. That is the American Pale Ale at 3.1, and this is a different set of hops.
  • You want the beer to be sweet. There is more malt here than in the weaker two, and the balance still leans bitter.
  • You want something you can drink four of. At 5.9% that is no longer what this family offers.

Where the session argument stops

The Ordinary Bitter at 3.3 exists so you can drink several across an evening. That argument does not survive the trip up this ladder, and it is worth saying plainly rather than letting the family name carry you.

A British pint is about 568 millilitres. Three pints of Ordinary is roughly the same alcohol as two of Strong.

At the bar

  • A half is a proper order here and not a shy one. British drinkers order halves of the strong stuff routinely.
  • Ask whether it is on cask. If it is, take it, because this style shows the serving method well and cask examples are rarer at this strength.
  • Give it ten minutes if it comes out cold. At 52F to 55F, which is 11C to 13C, the fruit and caramel arrive. Below 45F they do not.
  • If the label says ESB and the brewery is American, ask what the ABV is before you assume anything.
Say this out loud
  • Just a half of that one please.
  • Is the ESB on cask, or on the normal tap.
  • What strength is that.

The last one is the most useful sentence in this whole family. Strength is the only thing separating the three bitters, so asking it tells you which one you are actually being sold.

What to buy this week

  • Samuel Smith Organic Pale Ale, 5.0% and 31 IBU. Imported by Merchant du Vin, carried by most large American chains, in 550 millilitre bottles and 12 ounce bottles. The BJCP lists it as an example of this style. Buy this one first, because you can find it again next month.
  • Fuller's ESB, 5.9% in the bottle and 5.5% on draught. The beer the letters came from. Fuller's named a new exclusive American importer in April 2026 and brought ESB back on draft, so look for it on a tap list rather than on a shelf.
  • Green Man ESB, 5.5%, brewed in Asheville, North Carolina. Sold in six packs through Publix and other southeastern grocers, so this one is regional. A slightly more amber take on the idea, and a fair introduction at supermarket prices.
The comparison that teaches the most

A bottle of Samuel Smith Organic Pale Ale and a bottle of Fuller's London Pride from 3.4, on the same evening, at the same temperature. Same family, same hops, same kind of yeast. One is 5.0% and one is 4.7%, and the gap in body and warmth is still noticeable. That is the ladder in two glasses, for about ten dollars.

    Marmalade, dried fruit and a dry mineral finish are what this beer is made of, and the dried fruit comes from British yeast working at a higher strength. Grapefruit and pine point at the American Pale Ale from 3.1 instead. English hops smell earthy and floral, and they will never give you that.
  2. You are three hours into an evening and want one more. Why is a half of Strong Bitter a sensible order?
    Answer: A British pint at 5.9% is about 1.9 American standard drinks, so a half keeps the pace of the earlier pints
    The arithmetic. This is the rung where the family stops being a session beer, and a half brings it back in line with the 3.5% pints you started on. Halves are usually slightly worse value per ounce, not better. The flavour is not the problem, because this style stays balanced and drinkable at its full size.
  3. Match each benchmark to its honest availability.
    Answer: Samuel Smith Organic Pale Ale, 5.0% with Stocked by most large American chains, imported by Merchant du Vin · Fuller's ESB, 5.9% with Back in America from 2026 on draft, so look for a tap rather than a bottle · Green Man ESB, 5.5% with Regional to the southeast, sold in Publix and other grocers · An American beer simply labelled ESB with Everywhere, and frequently not this style at all
    Availability is worth checking before flavour, because a benchmark you cannot find teaches nothing. The last pair is the one to remember. American ESB is a label rather than a promise, and the BJCP warns that many of those beers are amber ales at ordinary strength.
  4. A Strong Bitter is sweeter than a Best Bitter, because it has more malt in it.
    Answer: False
    False, and it catches people who reason from the grain bill alone. There is more malt, and the brewer raises the hopping to 30-50 IBU to keep pace with it. The result is fuller rather than sweeter. A beer in this band that reads as clearly sweet is probably an American Amber Ale.
  5. One word. What should you ask about a beer if you want to know which of the three bitters you are being sold?
    Answer: strength
    The strength, or the ABV, which is the same question in different words. Strength is the only variable that moves across the three bands. Hops is the tempting answer because hop choice separates styles almost everywhere else in this course, and in this one family it does not move at all.

3.5.2.2 Food, faults, and the ESB story

What to eat, how to spot a bottle that has travelled badly, and the thing almost every American beer list gets wrong about three letters.

What to keep away from it

Delicate white fish and light salads. The beer rolls straight over them. Very hot chilli is a poor match too, because bitterness and heat sharpen each other, and there is more bitterness here than in the weaker two bitters.

What a good one does

  • Bitterness leads, with real malt flavour behind it rather than under it.
  • The fruit is orange, plum or dried apricot, and it comes from the yeast.
  • The finish is dry and slightly mineral, and it stops cleanly.
  • There is a faint warmth after the swallow, and no burn.

The faults to name

What you getWhat it means
Sherry, toffee and wet paper in an imported bottleOxidation. Air has got at the beer on its journey. This style is exported more than the other two, so it suffers most. The BJCP tells judges plainly not to assume oxidation flavours are traditional or required.
A hot solvent burn rather than a gentle warmthThe fermentation ran too warm. Warmth at the back of the throat is correct here. A burn on the way down is not, and it usually comes with a smell like nail varnish.
Butterscotch, or a slick buttery film on your tongueThis is diacetyl, a compound yeast makes early in fermentation and normally clears up afterwards. The guidelines allow no more than a trace. A clear butter popcorn character means the yeast was rushed.
A chalky drying grip on your gumsThis is astringency, which is a texture rather than a flavour. A little firmness from the sulfate in the water is correct and welcome. A lot of it strips your mouth and usually means the water was pushed too hard.
ESB is a traditional British beer style

It is printed on American tap lists, in competition rulebooks and on the back of cans. In England it is a trademark belonging to one brewery, and it is about fifty years old.

Fuller's of London launched ESB in 1971, developed from an older strong ale it had sold as a winter beer. The beer won CAMRA's Champion Beer of Britain three times and was exported widely. American brewers admired it and started putting the same three letters on their own beers.

Fuller's has taken legal action against British competitors who used the name, so in England ESB means one specific beer. In America it became a category, and the Brewers Association now runs Extra Special Bitter as a competition style with its own numbers.

The practical consequence is worth carrying. The BJCP warns that American beers labelled ESB are often malty reddish ales at ordinary American strength, which is really an American Amber Ale. Read the ABV, not the letters. In this family the number is the only thing that means anything.

Worth remembering

Strong bitter is still only five percent.

The word strong is relative to the other two bitters and to nothing else. At 4.6% to 6.2% this style is weaker than most American IPAs and far weaker than anything in Module 9. It marks the top of a British session ladder rather than the strong end of a modern beer list.

    The first three are what the recipe and the water are supposed to give you. The warmth and the burn are the pair to get right, because they come from the same place and only one of them is correct. Gentle warmth after the swallow is the style. A burn with a smell like nail varnish is a fermentation that ran too hot.

    False. Fuller's launched ESB as a product name in 1971 and defends it as a trademark, so British competitors do not use it.     Five. The band runs 4.6% to 6.2%, which is weaker than most American IPAs and a long way from anything in Module 9. Strong here is relative to the other two bitters and to nothing else. Carry that and the whole family stays in proportion.

American Strong Pale Ale

IPA hopping held at pale ale strength. It exists because American pale ales grew past their own category without becoming IPAs, and judges needed somewhere to put them.

British Golden Ale

  • What it is, straw to gold and brilliantly clear, so it looks like a lager sitting on the bar. Then you drink it and the bubbles are not there. Soft, low carbonation in a beer that pale is the tell, and the finish is dry with no caramel behind it.
  • Where it is from, England, from the 1980s. Brewers built it to win back drinkers who had moved to lager, and Hop Back Summer Lightning from Wiltshire is the beer usually credited with starting the category.
  • Why it tastes that way, the brewer leaves crystal malt out of the grain bill and uses pale malt only. Crystal malt is what gives an ordinary bitter its colour and its caramel note, so removing it is what makes this beer pale and dry. Hops go in late, for smell rather than for more bitterness.
  • Confused with, Best Bitter at 3.4, which keeps the crystal malt and is therefore amber to copper with a caramel and marmalade note. American Pale Ale at 3.1, which is darker at 5 to 10 SRM, colder, fizzier, and hopped with American varieties that smell of grapefruit and pine. Also plain lager, which has no fruit in the smell at all.
  • Numbers, 3.8% to 5.0% ABV, 20 to 45 IBU, 2-5 SRM. Serve at 50F to 55F, which is 10C to 13C. A pint glass.
  • You will probably, find it easy and a little quiet. Straight after an IPA it will taste like almost nothing. Come to it first, cool rather than cold, and it is one of the most drinkable beers in Britain.
  • Ordering it, say: is the golden ale on cask, and when did it go on. A golden ale on a slow keg tap is a dull pint, and the same beer fresh on cask is the whole argument for the style.
  • Eat with, a cheddar sandwich or grilled chicken. There is no caramel sweetness to fight the food, and the bitterness is firm enough to reset your mouth between bites.
  • Is it any good, yes, and it is modest on purpose. It was built to be drunk in threes on a warm afternoon, so judging it against an IPA is unfair to both of them.
  • Try this one, Hop Back Summer Lightning, 5%, bottle conditioned, still brewed all year at Downton in Wiltshire. This is a British buy rather than an American one. When Fuller's relaunched in the United States in April 2026 the importer took London Pride and ESB, which tells you how little of this style crosses the Atlantic.
  • The myth, people call it British lager. It is fermented warm with ale yeast, and it is pale because one malt was left out rather than because of anything a lager brewer does. What is true is that it was designed to compete with lager and to look like one on the bar.
  • Remember, a bitter with the crystal malt taken out.

Australian Sparkling Ale

  • What it is, cloudy gold under a tall white head that sits there and refuses to fall. The carbonation prickles, and there is a visible layer of yeast on the bottom of the bottle. Roll the bottle before you pour and the beer goes hazy on purpose.
  • Where it is from, Adelaide, South Australia. Coopers has brewed it since 1862, and the brewery is the reason the style exists at all.
  • Why it tastes that way, the brewer packages it with live yeast and lets it finish fermenting in the bottle. That is what builds the very high carbonation, the thick head and the sediment, and the house yeast strain is what makes the pear and apple smell.
  • Confused with, American Pale Ale at 3.1, which is clear and smells of grapefruit and pine rather than orchard fruit. German Hefeweizen at 4.1, which is also cloudy with yeast and tastes of banana and clove instead. British Golden Ale, which is paler, far flatter and drier in the finish.
  • Numbers, 4.5% to 6.0% ABV, 20 to 35 IBU, 4-7 SRM. Serve at 45F to 50F, which is 7C to 10C. A pint glass or a plain tumbler.
  • You will probably, like it more than you expect. The bitterness lands harder than the number suggests, and the fruit comes from the yeast rather than the hops, which is unusual in a beer this pale.
  • Ordering it, say: with the yeast or without. In Australia the standard move is to roll the bottle gently and pour the lot in. If you want it bright, stand the bottle upright for a day and leave the last inch behind.
  • Eat with, a meat pie, fried fish or a sharp cheddar. The carbonation scrubs fat off your tongue faster than almost any other ale can.
  • Is it any good, it is very good, and it is a style with one member. Say so out loud. Coopers is the reference, the outlier and effectively the entire category, which is not a criticism of the beer.
  • Try this one, Coopers Sparkling Ale, 5.8% and 32 IBU, in 12 ounce bottles. It is exported to the United States and stocked by import specialists and the larger chains rather than by every corner shop.
  • The myth, sparkling does not mean it resembles sparkling wine, and it does not mean lager. It means highly carbonated. The haze is not a fault either, it is the yeast you have just poured into the glass.
  • Remember, one brewery, one beer, and the yeast is in the bottle.

Cold IPA and India Pale Lager

  • What it is, it looks like a pilsner and hits like an IPA. Very pale, bright and thin in the body, with a hop smell that does not match how light the beer feels. The finish snaps shut and leaves your mouth clean rather than sticky.
  • Where it is from, Portland, Oregon, 2018. Kevin Davey brewed the first one at Wayfinder Beer and called it Relapse IPA. India Pale Lager is the older name and came out of American craft breweries during the 2010s.
  • Why it tastes that way, three decisions. The brewer uses lager yeast but runs it warm, at about 65F, which is 18C. Then 20 to 40 percent of the grain is rice or corn, which strips malt flavour and body out. Then the beer is dry hopped while it is still fermenting.
  • Confused with, American IPA at 3.2, which uses ale yeast and keeps more malt body and more yeast fruit. India Pale Lager, which is fermented cold like an ordinary lager and is what a good many brewers say a Cold IPA actually is. Brut IPA at 3.2, which is dried out with an added enzyme rather than with rice.
  • Numbers, no BJCP entry exists. Read it against India Pale Lager: 5.6% to 7.9% ABV, 30 to 70 IBU, 2.5-6 SRM. Serve cold, at 40F to 45F, which is 4C to 7C. A pint glass.
  • You will probably, like it if you like West Coast IPA and dislike sweetness. Dislike it if you want the soft juicy sort, because this is the opposite decision taken on purpose.
  • Ordering it, say: what makes yours a Cold IPA. Half the answers will be about the lager yeast and half will be about the rice, and either one tells you what is in the glass. Then ask how old it is, because these go stale as fast as any IPA.
  • Eat with, fried chicken, tacos or a sharp cheddar. It is dry and bitter with almost no sweetness, so it cuts through fat rather than joining it.
  • Is it any good, the good ones are excellent and the name is a mess. Nobody agrees where Cold IPA stops and India Pale Lager starts, and plenty of brewers use the technique and refuse to use the word.
  • Try this one, Wayfinder Original Cold IPA, 7%, in 16 ounce cans from the brewery that named the style, sold by American online bottle shops. For the other side of the argument, Jack's Abby Hoponius Union is the best known American India Pale Lager and is sold year round in cans.
  • The myth, cold does not mean you serve it colder. It points at the lager yeast, which is what brewers mean by cold fermentation, even though this particular beer is fermented warm on purpose. The name was never designed, which is why it confuses people.
  • Remember, lager yeast, run warm, on a bed of rice.

American Strong Pale Ale

  • What it is, a pale ale that smells like an IPA. Pale gold to light copper, clear or lightly hazy, with a big hop smell and almost no caramel sweetness under it. The weight in your mouth is the tell, because it is lighter than the smell leads you to expect.
  • Where it is from, the United States, and more precisely a competition entry form. The Brewers Association wrote the category to hold American beers that had grown past pale ale strength without becoming IPAs.
  • Why it tastes that way, the brewer builds a pale ale, keeps the caramel malt very low, hops it at IPA rates, and then stops the gravity short of IPA strength. The defining decision is a refusal to go to 7%.
  • Confused with, American Pale Ale at 3.1, which is weaker and carries less hop smell. American IPA at 3.2, which is stronger and more bitter at 5.5% to 7.5% and 40 to 70 IBU. Juicy or Hazy Strong Pale Ale, which is the same strength with soft bitterness and a cloudy body.
  • Numbers, 5.6% to 6.4% ABV, 40 to 50 IBU, 3-8 SRM, from the Brewers Association only. Serve at 45F to 50F, which is 7C to 10C. A pint glass or a tulip.
  • You will probably, like it if you like IPA but find 7% too much on a weeknight. You get the hop smell at a strength you can have twice.
  • Ordering it, do not ask for it by name, because the name lives on entry forms. Say: what do you have between your pale ale and your IPA. That is the beer, and the bar staff will know it instantly.
  • Eat with, a burger, fried chicken or aged cheddar. High bitterness against fat and salt, with no sweetness in the beer to get in the way.
  • Is it any good, the beers are good and the category is paperwork. It exists so judges can sort entries fairly, and nearly every brewery that makes one calls it an IPA on the can.
  • Try this one, Lagunitas IPA, 6.2% and 45.6 IBU, sold in supermarkets across the country. It sits inside the Brewers Association band for this category while calling itself an IPA, which is the clearest demonstration of why the category had to be written.
  • The myth, strong here does not mean strong. At 5.6% to 6.4% it is barely above a pale ale and under most IPAs. The word is relative to the pale ale category sitting next to it, and to nothing else.
  • Remember, an IPA that stopped early.

    Golden ale is the plain pale one in this group. Best Bitter is its closest relative and the whole difference is a single malt. American Pale Ale is the tempting near miss, because BJCP itself says golden ale is closer to an American Pale Ale than to anything else. Hop origin is what you can actually smell in the glass.
  2. Somebody hands you a cloudy gold beer with a tall head that will not fall and a layer of yeast in the bottom of the bottle. Which of these is it?
    Answer: Australian Sparkling Ale
    The sediment and the head give it away. An Australian Sparkling Ale finishes fermenting in the bottle, which builds very high carbonation and leaves yeast behind. British Golden Ale is tempting because it is also a gold coloured pale ale, and it is brilliantly clear and much flatter. A Cold IPA is pale and bright, because clarity is part of its point.
  3. A Cold IPA is fermented with which kind of yeast, run warmer than that yeast usually gets?
    Answer: lager
    Lager yeast, held at about 65F, which is 18C, instead of down in the forties. That is the decision the word cold is pointing at. Ale yeast is the tempting answer because the beer is called an IPA and drinks like one, and using ale yeast would simply make it a West Coast IPA.
  4. Sort each line into the American style it belongs to.

    The three bands overlap, which is exactly why the middle one was invented. American Strong Pale Ale sits in the gap: too strong for a pale ale, not bitter or strong enough for an IPA. The tempting mistake is to read strong as high alcohol, and 6.4% is not high.
  5. Why did British brewers start making golden ales in the 1980s?
    Answer: To win back drinkers who had switched to lager
    Lager was taking the British market, and a pale, clean, lager coloured beer on the bar was the answer to it. The malt surplus is the tempting option, because the recipe genuinely is a malt decision, and the reason behind it was commercial rather than agricultural. There has never been a British law about beer colour.
  6. Match each beer to the decision that defines it.

    Two of these differ only in fermentation temperature, which is precisely why so many brewers say Cold IPA is India Pale Lager with a better name. Brut IPA is the tempting distractor, because it is also bone dry and also very pale, and it gets there with an enzyme rather than with rice.
  7. The word strong in American Strong Pale Ale means the beer is above 8% alcohol.
    Answer: False
    False. The Brewers Association band is 5.6% to 6.4%, which is barely above an ordinary pale ale and below most IPAs. Strong is relative to the pale ale category sitting next to it on the entry form. It is tempting because strong means high alcohol in almost every other style name in this course.

    Both are pale ales from Commonwealth countries, which is why the guidelines put them in one category and why they are worth sorting. Clarity and fizz do the splitting. One is bottle conditioned, cloudy and lively, the other is bright, flat and dry.

Colour will not separate these four. All of them are pale and the bands overlap heavily, so use clarity, carbonation and the smell instead.

Two questions get you there faster than the table does. Is it cloudy rules the Australian one in and the other three out. Does it smell of American hops rules the British one out. That leaves a Cold IPA and a strong pale ale, and the body decides: thin and clean is the Cold IPA, soft and rounded is the other.

What a Cold IPA is, and whether it is a style at all.

  • BJCP 2021. No entry. A Cold IPA at a competition would be judged as an American IPA, or entered as a specialty beer with the brewer explaining what was done.
  • Brewers Association 2026. No Cold IPA entry either. These beers go into American-Style India Pale Lager, at 5.6% to 7.9% ABV, 30 to 70 IBU and 2.5-6 SRM. That entry was widened in 2022 to allow corn, rice and other adjunct grains, which is how it came to fit.
  • Wayfinder Beer, the brewery that named it. A published specification: 6.4% to 7.9% ABV, 50 to 70 IBU, 2.5-5 SRM, lager yeast fermented warm, 20 to 40 percent rice or corn, and dry hopping done during fermentation rather than after it.
  • A good many working brewers. The same techniques with a different name. Some use every one of them and call the result a West Coast IPA or a dry hopped lager instead.

There is no referee here, so do not pretend there is one. The technique is real and repeatable, and the name is a marketing word that stuck. In a taproom in 2026, expect something between 6% and 7.5%, very pale, very dry, and hopped hard. If you want to know what you are getting, ask the bar what makes theirs a Cold IPA, and the answer will tell you which camp the brewery sits in.

The numbers for British Golden Ale.

  • BJCP 2021, style 12A British Golden Ale. 3.8% to 5.0% ABV, 20-45 IBU, 2-5 SRM, original gravity 1.038-1.053.
  • Brewers Association 2026, English-Style Summer Ale. 3.7% to 5.1% ABV, 20-30 IBU, 3-6 SRM, original gravity 1.036-1.050. Torrified or malted wheat is often used, at a quarter of the grain bill or less.

The strengths agree and the bitterness does not. BJCP allows 45 IBU, the Brewers Association stops at 30, which is a real gap rather than a rounding difference. The two are describing the same beer at different points in its life: the British original was hoppier than the American reading of it. Expect anything from gently bitter to properly sharp, and do not use the IBU number to identify one.

The numbers for Australian Sparkling Ale.

  • BJCP 2021, style 12B Australian Sparkling Ale. 4.5% to 6.0% ABV, 20-35 IBU, 4-7 SRM. Notes that the bitterness lands harder than the IBU figure suggests, and lists Coopers Sparkling Ale as the commercial example.
  • Brewers Association 2026, Classic Australian-Style Pale Ale. 4.0% to 6.0% ABV, 15-40 IBU, 3-9 SRM. Calls perceivable fruity esters a defining character, and says yeast held in suspension may raise the perception of bitterness.

The Brewers Association box is wider at both ends, which is what usually happens when a guideline has to cover more than one brewery. In practice one beer fills the style, so the bands matter less than they look. Both books agree on the two things you can taste: fruit from the yeast, and more bite than the number promises.

Whether American Strong Pale Ale is a style.

  • BJCP 2021. No entry. A beer of this strength and bitterness is judged as 18B American Pale Ale, at 4.5% to 6.2% and 30-50 IBU, or as 21A American IPA, at 5.5% to 7.5% and 40-70 IBU. It has to be pushed into one box or the other.
  • Brewers Association 2026, American-Style Strong Pale Ale. A category of its own: 5.6% to 6.4% ABV, 40-50 IBU, 3-8 SRM, original gravity 1.050-1.058, with low caramel malt and high to very high hop character.

This is a competition problem rather than a drinking problem. Brewers kept entering pale ales that were too strong for the pale ale class and too gentle for the IPA class, and the Brewers Association gave them a home. Nothing about the beer changed. Almost every example you can buy is labelled IPA or pale ale on the can.

Worth remembering

Pale, cloudy, cold, nearly an IPA.

Four words in card order. Pale is the British Golden Ale, which took the crystal malt out. Cloudy is the Australian Sparkling Ale, which left the yeast in. Cold is the Cold IPA, which swapped in lager yeast and then ran it warm. Nearly an IPA is the American Strong Pale Ale, which stopped at 6%. Each word points at the decision that made the beer, which is worth more than four sets of numbers.

    The first three are true, and together they are the honest answer, which is that the question is genuinely open. The fourth is the trap. The Brewers Association dealt with Cold IPA by widening its India Pale Lager entry to allow rice and corn, and it has never written a separate Cold IPA style.
  4. Someone tells you what they want tonight. Sort each one by whether a British Golden Ale fits.

    This is a quiet beer built for repeat pints, so pacing and dryness are what it answers well. The hop smell request is the near miss. A golden ale can reach 45 IBU and still smells modest next to an IPA, so sending somebody there sets them up to be disappointed by a good beer.
  5. You want an American Strong Pale Ale in a taproom. What do you actually say?
    Answer: What do you have between your pale ale and your IPA
    The category name lives on competition entry forms and almost never on a menu, so asking for it by name usually gets a blank look. Asking for the gap between two beers the bar definitely has gets you the right glass. Strongest pale ale is tempting and will often hand you a 9% double IPA.
  6. Match each of the four to a food, and to the reason it works.
    Answer: British Golden Ale with A cheddar sandwich. No caramel sweetness to fight the food, and enough bitterness to reset your mouth · Australian Sparkling Ale with A meat pie.     Three mechanisms are doing the work here: bitterness against fat, bubbles against fat, and the absence of sweetness so that the beer is not fighting the plate. The Australian one is the odd one out, because its carbonation is doing more of the job than its hops are.
  7. Before you read the table again. How strong do you think a Cold IPA usually is?
    Answer: 7% ABV. An ordinary lager is about 5%. An American Pale Ale runs 4.5% to 6.2%. An American IPA runs 5.5% to 7.5%.
    About 7%, and the India Pale Lager band it gets read against runs 5.6% to 7.9%. Most people guess low, because the beer is pale and thin bodied and finishes clean. That is the risk built into the style: it drinks like a lager and it is not one.
  8. The hook for this group is four words in card order. Put them in the right sequence.
